For those that dont believe this guy for some reason. I have one in my living room. One side is fan speed and one side dims the fan lights.

Yes. That will work.

I just redid 4 bedrooms and tossed out the old knob-style fan controls. I installed Lutron 3-Speed Fan Controls https://www.amazon.com/dp/B0006UUIC4/

Oh, those are great but... no Z-Wave. Basically someone needs to come out with something like the FanLinc or that Lutron 2-in-1-gang controller you linked.

Edit: Those are also available in 'Slightly More Modern Standard White'

It does ramp up slowly. I have something similar to this https://www.amazon.com/dp/B000MAU8ZA/ref=cm_sw_r_cp_api_DbaszbVPR3WZH

That wouldn't even work on a fan and light as a standalone application because it's the "companion" to the real dimmer. You'd need to buy this and then if it's a multi-location application, use the one you pointed to. And no, there is no caseta or anything else.

Lutron's Radio Ra2 and Homeworks QS make fan speed control but it's a single application without light built in.

What if I was to get a wall switch like this if i choose to eliminate the the other switch. Would this be the option for the best of both worlds?

Awesome.

I know this is a reach, but what else would I need to make this work with HomeKit? HomeBridge? I do have an extra raspberry pi I could use.

My use case is really simple. No light, only ceiling fan. I currently use this switch:
