I firmly believe in the sandwich bag, but not the rubber band. The rubber band can lead to mold, and if you have a proper drawer in the fridge, you are fine without it.

Also, the rubber band places absolutely unnecessary microseconds between me and cheese.

Also, cheese slicer master race, checking in. I feel bad for all the non-board slicer peasants.

American here - My family always had one of those, but I always preferred our other cheese slicer, similar to this: http://www.amazon.com/Presto-Cheese-Slicer-Fixed-Roller/dp/B003OEFPRC

Personally, I feel that the extra width and space between the wire and the roller allow for slightly better control over the thickness of the slices.

How do people cut their cheese without a cheese plane? I think I fail to understand OP's story, I thought he was slicing (with a cheese plane) from the middle?

I carefully screwed a small block of wood to it above the wire, so I can get a consistent 1-inch thick bar of soap cut. I also screwed a small block on the side to prevent the wire coming down pushing the loaf to the side. Works great, been using it for a couple years now.

If you don't fancy the DIY option, just pick up one of these (doesn't have to be that one specifically, just a wire one in general). As a skeptic of "kitchen gadgets", especially single-purpose ones, I was amazed and delighted by how damn well these things work.
