  • Go to your local asian market.
  • Pick up a can of Companion brand mock duck (it's seitan nuggets) can looks like this.
  • Open the can, and dredge the bits in corn or potato starch.
  • Fryolate at 375 until brown. Try not to use duck fat \^_\^
  • Toss in your favorite wing sauce*; I recommend a mix of equal parts Sriracha and maple syrup. Nice and simple.
  • If you're feeling like a little extra oomph, bake them until they bubble.

    I call them phoenix wings, and, as a meat eater, it's one of the few meat-alikes I find just as satisfying as the real thing.

    * My favorite wing sauces, phoenix or otherwise.

  • Classic: 3:2 melted butter (or half-and-half coconut fat and coconut milk, plus salt to taste) to bog-standard hot sauce
  • Chipotle lime: 2:1:1:1 Bufalo chipotle sauce : sugar : lime juice : butter (same sub applies)
  • Sriracha maple: 1:1 Sriracha : maple syrup
  • BBQ: Straight bbq sauce. I like Stubbs, but whatever you love.
  • Ranch: 1 packet ranch powder, rehydrated with the thick canned coconut milk (I prefer Aroy-D) until it's a reasonable texture.
  • Garlic: Just a honeyed traditional aioli (mash garlic, salt, and your favorite herbs to a paste; while still mashing, add oil until it's a fluid; keep mashing, and add the same amount of honey. Optionally, include an acid like lemon juice, or your favorite garlic-compatible spices)

the bloating is likely from all of the sodium. not sure what's in the veggie broth, but most broths are very high sodium, and miso has a ton of sodium. Most asian style sauces (like soy sauce) do. If you want a similar sauce for veggies that's lower sodium, check out coconut aminos. Their garlic sauce is even lower sodium and better IMO. it's garlicky and a little spicy.

Savoy coconut cream has no thickeners, just more coconut pulp (or less water, if you want to think of it that way). Make a cortado (1/2 espresso, 1/2 cream) someday with this. Amazing.

Coconut cream and milk also come in boxes. In restaurants I've actually ordered to boxed stuff more commonly. Being unfamiliar with a product doesn't mean it doesn't exist.

I love mixing protein powder in with some oats or beans or something like that. Just add a splash of water and mix it so that it's thick and creamy like a nut butter (not watery). Then one of my favorite savory sauces is coconut aminos garlic. It has a bit of cayenne, too, but not too much. And it's very low sodium compared to sauces like it. I use it in place of soy sauce since soy sauce has about 5-6x the sodium.

And re: protein, I wouldn't worry about complete/incomplete as long as you're eating mostly whole foods throughout the day, but I love this vegan protein optimizer from true nutrition (it's the cheapest I've found). You can also make your own protein blend from whatever you want, they sell like 5 or 6 different kinds of protein powder. And you can get it in unflavored or light flavoring. They custom make it when you order it. They have a coupon "GOVEGAN" that gets you 5% off, too. You can use it site-wide (they sell vegan supplements and stuff, too) and I don't think it ever expires.

I like to use a coconut Amino garlic sauce- I use this one.

I don't usually use it alone, but it's excellent for building sauces. I also don't eat soy, so this is a great option for that as well as being gluten free.

I personally am fine with Coco Lopez. I also use Coconut Milk directly in some recipes for cocktails.

The coconut milk/cream I used might also be higher fat than the "typical" milk. Coco Lopez is about 18% fat by weight. The stuff I used is 24%. Coconut Milk is about 15% I think.

For real, coconut aminos are so amazing. It tastes IDENTICAL to soy sauce, but without the sodium. It is certainly more expensive, but for those of us (myself included) on a low sodium diet, its a lifesaver. Much, much healthier than soy sauce. I believe it only has 4 or 5% sodium per serving, whereas soy sauce usually has at least 30 % or so.

I don't know how I missed this message until now! Sorry about that. This one has no additives or preservatives. Trader Joe's has a coconut cream that is pretty delicious straight out of the freezer, and they also have a light coconut milk. Even at my local Ralph's/Kroger I was able to find some coconut cream in the ethnic food section, specifically by the asian foods and curries.

Hopefully you can make something delicious for Christmas! :)

Coconut Lemonade Milkshake

  • 8oz sweetened coconut milk from a can (such as Goya cream of coconut)
  • 2oz plain, 1% Kefir (could be omitted entirely and replaced with more coconut milk, but Kefir replaces the good bacteria in your gut)

When I began transitioning into a raw diet, I chose agave over grade A/B maple syrup, especially with raw desserts. Truthfully, I was doing more harm than good since agave is pure fructose; I now avoid it altogether.

Now, I use pure maple syrup (B since it is more nutrient rich) or Coconut Nectar --I bought mine at Wegman's for much less-- which has the same consistency, only slightly thicker, than maple syrup. I absolutely adore the taste!

It seems like you experienced such a mood swing because you consumed an excessive amount. I would avoid agave from now on, but if you run out of whatever substitute you choose and you have agave left over, use sparingly, if any at all.

Coconut nectar is made from the sap of coconut flowers, from which further reduction yields coconut sugar. It's amazing! I find it works well as a substitute for other sweeteners in baking, or in coffee/tea, or in paleo lemonade; it's essentially a staple in my kitchen armory against sugar cravings.
