If I were ever going to do this, here is what I'd do to avoid the over cooked rice problem.

I'd add all the ingredients including the liquids to the slow cooker early in the day and let that all stew for x-hours.
I'd ladle out as much of the cooking liquid as possible and use that +water to cook my rice separately. I would use either bomba or arborio rice, and definitely would recommend avoiding any variety of long grain rice.

I would add the cooked rice to the slow cooker and mix it well and then I'd turn the heat setting up to high and remove the lid for at least an hour.

This would allow for any excess liquids to be easily absorbed by the rice and/or evaporate. This would also concentrate the flavors (so go easy on the salt until the dish is finished cooking) and would help to avoid over cooking the rice while still allowing the rice to develop a nice crust at the bottom of the slow cooker.

Really you'd just be leveraging the slow cooker to make the incredible broth.

Buy better rice. I can't stress this enough. You can seriously taste the difference.

Just try a small bag of premium koshihikari from Amazon or a Japanese grocery store.

Multiple rinses until the water runs clear.

Mountain House diced chicken costs a little less than $3 per serving.
Harmony House vegetables cost $2.50 per pouch.
Minute Rice costs $0.30 per serving. So at the end of the day, mixing all of these into one bag will save you about 40% compared to the prepackaged Mountain House meals with a very minimal amount of effort.

Instant Pot Mushroom Wild Rice

  • 2 tablespoons unsalted vegetable broth
  • 4 garlic cloves, minced
  • 1 medium yellow onion, finely diced
  • 8 ounces mushrooms, thinly sliced (I used cremini, white button or baby bella)
  • 1 3/4 cups water
  • 1 1/2 cups wild rice blend (combination of black and basmati rice)
  • 1 teaspoon Spanish paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon chopped fresh thyme (or 1/2 teaspoon dried thyme flakes)
  • 1/2 cup raw cashews
  • 3 tablespoons nutritional yeast
  • 1/2 cup unsweetened almond milk

    INSTRUCTIONS


  1. Set Instant Pot to the Sauté function. Add vegetable broth, garlic, onions and mushrooms. Cook for 5 minutes, stirring occasionally, until onions are translucent and soft. Turn the Instant Pot off.
  2. Add the water, rice, Spanish paprika, salt, black pepper, and thyme. Stir well. Replace the lid, then set the Instant Pot to  Manual/Pressure Cook (at high pressure) for 22 minutes. *Make sure the Instant Pot is set to the “Sealing” position.
  3. Meanwhile, in a high powdered blender, add the raw cashews and nutritional yeast. Process until fine (powder-like consistency). 
  4. Once the Instant Pot is done cooking (the time has elapsed), let the pressure release naturally (about 15-20 minutes). When ready, open the lid, add the cashew powder and almond milk and stir well. Add salt and pepper to taste. Keep this dish in an airtight container in the fridge for up 5-6 days. Makes roughly 4 (1-cup) servings.

Ukrainian living in the Midwest here. How long did you cook the groats? I find that after fifteen minutes mine get mushy. You could try toasting in butter beforehand too.

I buy cases of toilet paper or paper towels at a time. I buy a case of Softsoap, for example, instead of one bottle. Or past time I bought a bottle I just bought a case of the refills.

I buy McCormack spices by the case like onion powder and garlic powder.

Toilet paper is $22 for 48 rolls of AngelSoft. Paper towels are $27 for 24 rolls of Sparkle select a size.

I buy my wife's feminine hygiene products by the case on Amazon as well. It's much cheaper than the grocery store.

I buy Kind breakfast bars by the case. For a box (4 bars) at the grocery store they want $6. For a case (8 boxes) they want $18 on Amazon and sometimes it has a $1 off coupon too.

My wife has Celiac's too so some things at the grocery store are marked up for being in a separate section. Gluten free pasta is cheap on Amazon. I bought a case of Arborio Rice last week too because we make a lot of risotto. I would buy one large jar of Arborio at a time for $9-11 per jar. A jar is 32 oz of rice. I bought this for $24 last week. It's 4 jars. So now we have a lot of Arborio rice but it doesn't go bad. But I saved a boat load compared to the grocery store.

Every night I have a base of either quinoa or rice, prepared in my rice cooker with various vegetables and spices. If rice, I'll roll it up with nori for homemade veggie rolls.

With dinner I have a 12 ounce glass of water with two tablespoons of flax and one tablespoon of chia.

I buy my pinto beans and black beans loose in bulk at the local grocery store when picking up my vegetables, usually around 5 or 6 pounds of each at a time.

Cumin, garlic powder, tahini, and dry garbanzo beans go for a good homemade hummus in a food processor. Needs a fresh lemon or two squeezed into the tahini. Original recipe had olive oil and salt, I leave out the oil entirely and either cut the salt down to a dash or none at all.

I keep oats and almond meal on hand to make pdb cookies with the same food processor, just add a banana or two, cinnamon, nutmeg, almond butter, and raisins if you like. The original recipe called for dates and I said eat me I'm doing raisins.

I got peppermint in bulk to make tea with, both by itself as well as mixing with chamomile, mugwort, etc.

I keep almost all of the above in these convenient cereal containers to both extend shelf life, shelf space, and remove any branding or advertising. Mason jars are also awesome!

Don't forget you can dehydrate your own food as well!

What do you consider inexpensive? I can get a 1 lb bag that has 11 servings (1/4 cup dry) for less than $3 at Trader Joes. But if you don't have one of those near you or that's still too much, maybe this bulk purchase would be better?

Disclaimer: I suck at math on a good day and I've been drinking, but I'm kind of positive this works out to be somewhere just over a dollar a pound. If I'm wrong, I'm very sorry. I suck at math.

I saw you had 10 lb rice for $30 on your list - this site has 20 lb rice (link to it) that is for $24, so that might be a helpful substitution, and some other things listed there as well.

Edit: I neglected to mention that I have not yet updated this list for the day, so some of the prices don't match what I show. I will be updating it within the next few hours, but most of the prices hold stable and are valid.

Bud, do you even understand that food stamps exist? You get an EBT card here. The poorer you are, the more you get. If they tell you that you have to apply for jobs, all you do is say "My mental health will not allow me to sustain employment" and then they just say ok and keep giving you free credit for food, indefinitely. If you starve in the United States, it's because you're literally a helpless retard. You can regularly stock your fridge and cabinets from dumpsters because grocery stores throw good food away. There are entire communities of people who dedicate their time to doing this. There's an over abundance of food in the United States. Literally nobody is starving unless they're being held captive in a basement or going on hunger strike.

Fuck, in some places you could survive off of eating stray cats if you really needed to.

50 lbs of rice is $60

Edit: There are food pantries fucking everywhere across the united states. You could even go on a local facebook group with your obama phone and say "Hey, I am shitting blood and literally starving to death because I'm a mouth breather who didn't think to ask anyone on here for free food earlier than this" and people will hook you up with a bunch of canned goods or freezer burnt meat or whatever. Or they'll literally just take you grocery shopping like I've done for homeless people.

Well, is the rice going to be your main food source? Are you going to eat it everyday, or are is just something to have alongside other food? Also, how much rice do you normally eat at a meal/per day? These are the things we need to know in order to gauge how much rice you will need for a 4 month supply. More than likely, it wont be more than a few pounds of uncooked rice (if that). You also have to remember that rice doubles in size when you cook it.

Here is a 50 lb. sack of brown rice for $56. This would be way more than you need for 4 months (I assume) and you could actually probably get it cheaper at a grocery store. At my local grocer you can usually get a pound of brown rice for ~$1.

I hear people talk about that all the time, but it has bugger all to do with genetic engineering. That is the domain of conventional selection. It certaintly is important, and I'd take it a step further and say we need more species level biodiversity (things like teff or quinoa or manoomin or ōhelo or prickly pear or the many other less commonly cultivated crop species). Unfortunately, I rarely see anyone work to actually do something about that, to actually promote biodiversity among the general public; it's mostly just attacking biotechnology and using biodiversity as an rather poor justification. If the anti-GMO groups spent half as much time and effort promoting biodiversity (which is the big issue here...can't really expect a thing to be grown if the end consumer neither knows nor cares what the thing is can you?) as they do lying about and scaremongering over a something that has been proven time and again to be benefitial the world would be a better place.

I don't have a rice cooker, but I have a pressure cooker. Still, I've tried it once in there and wasn't impressed. I prefer the old-fashioned stove top way. Sure, you have to time it, but it's great and works really well for me.

My tried and true recipe is straight out of Sushi for Dummies. I use short grain rice (I've only ever used Lundberg Sushi Rice, but any one will do), and rinse it until I am sick of rinsing. This recipe calls for a "splash of saki" and something pickled(?) to add flavor. Since I had neither of those, my tip is to take a bit of condensed stock/base (my favorite is Better Than Bouillion), and mix it up in the water. Which flavor you choose is up to you, but I prefer the vegetable base. I have a lobster base that I've been eager to try, but even with the veggie base, it always comes out delicious enough to eat on it's own, but not overpowering or outshining anything I make with it.

My husband hates mushrooms and I love them. He's out at a business function this evening, so I made myself a mushroom-laden dinner.

I vacuum sealed a whole, skin-on chicken leg with a few tablespoons of duck fat (refrigerated so it was solid and therefore compatible with my vacuum sealer), chopped cremini mushrooms, and a sprig of thyme and sous vided it for 3 hours at 165°F (74°C). I removed it from the bag, put a tablespoon of the liquefied fat into a frying pan, heated it to smoking, and then seared the chicken leg. I took the leg out of the pan and let it rest while I lowered the pan temp slightly and dropped in the mushrooms, cooking them until browned.

For the risotto, I toasted 1/2c wild rice blend along with a minced spring onion and 1 tbsp of butter in a saucepan until the rice smelled aromatic and nutty. I added 2 cups of chicken stock, a splash of white wine, and some freshly ground pepper and simmered for an hour on low heat with the lid on. When the liquid was almost completely absorbed, I pan-seared maitake mushrooms with a little butter and stirred them into the risotto, letting it sit on very low heat while finishing the chicken.

Chicken leg served topped with the mushrooms and some partially-dried cilantro. Risotto topped with chopped scallions.

I was very happy with the quantity of mushrooms consumed this evening.

Edit: Whoops, I used 2c chicken stock, not 1. Fixed.

OP is talking about using a pan, implying a situation where there is something at least kitchen-esque at their disposal, so I think the possibility is at least one that could be explored.

For those for whom a rice cooker is truly impossible for, however, there is still an option for better rice. Something like this, while admittedly a little more expensive, is a much superior rice while also allowing you to cut back on the sodium!

I don't know if posting links is allowed in this sub, but I said I'd report back, so here it is. I bought these and they seem to be healthy. The amount I purchased was tiny but the last time I strained out the grains, I appear to have double what I started with. It definitely smells fermenty, but I haven't actually tried the fermented milk yet--right now I'm just trying to get the grains to a reasonable size.

Bob's Red Mill is what I find in local stores, you can get it online ( https://www.amazon.com/Bobs-Red-Mill-Organic-Buckwheat/dp/B000EDBPZC ). Might be other cheaper brands out there but I have not really looked into it. A friend of mine has Celiac's and gluten causes the opposite effect on her along with several discomfort. Not sure what that is - couldn't hurt to try a probiotic (kombucha or vegan yogurt) to get things moving.
