Konjac. I think they’re like weight watchers brand. I haven’t seen the kind made from mushrooms at my store yet, so I settled on these:

The internet! I got these off of amazon. I've heard they can potentially be found at some mainstream stores near me, like Walmart and Sprouts, but I don't have the patience to look.

They are still somewhat high in glycemic carbs despite the high fiber content, but they taste great and are very filling.

I really hate the texture of the Miracle noodles. I find the texture slimy and I can't stand the odour. I prefer the Skinny Pasta Konjac noodles (I buy them off Amazon - https://www.amazon.com/gp/aw/d/B01HH9XE2C/ref=mp_s_a_1_1?ie=UTF8&qid=1519604348&sr=8-1-spons&pi=AC_SX236_SY340_FMwebp_QL65&keywords=Skinny%2BPasta&psc=1&th=1).

The basil seeds were pure luck - found them at a small Asian supermarket.
The konjac pearls I use are about 3/8"-1/4" in diameter (not perfect spheres, think big couscous).

I've never had Shirataki noodles before and these NOoodles seem to have the best rating on Amazon. Anybody have experience with them?
These are the kind I buy. I couldn't find an image of the reverse side of the package, but there is only one ingredient: sweet potato starch.
I made it and served it over some of these noodles that I got from Amazon here. .
The noodles are a little al dente, so you may need to boil for 1-2 minutes. We just put the noodles in a bowl, microwave for 15 seconds, then serve the Chicken Cacciatore over it. Very good!
Next time I will saute the vegetables, drain and remove them, and then create the sauce next. I want the sauce to thicken up before adding back in the chicken and veggies. My peppers made my sauce a little watery.
The ones I've seen in grocery stores still have carbs. But these just arrived couple days ago and I put a package in some pho last night. It was damn tasty!

Really? I see keto sushi all the time, though. If it's the bland rice you can't mimic, try mixing cauliflower rice with Skinny Pasta rice it's much more complementary than either one on its own. Once those are prepped and mixed, mash in some cream cheese for binder and you have a sticky rice. The flavors of sushi really come from the fish, soy sauce and wasabi. Of course you could skip the rice completely just wrap your fish and veg in cream cheese and nori.
The flavour of these is awesome. They also have a bit more bite and texture than then usual variety in my opinion

Yeah they are thinner I think because they actually are dried.
They are super tasty though and a great thing to keep in a pantry for a quick meal.

I have been getting into DIY instant noodles. Minimal prep (just stack the ingredients in the container), then just add hot water. I even use the dried kame chinese noodles rather than precooked noodles and ive found that they cook up super nicely.
It's been a long time since I had supermarket ramen, didn't think noodles would have fat in 'em. Wonder what is nutrition for the noodles and the seasoning packet seperately.
I prefer rice noodles, but noodles like Kame Chinese noodles are wheat and are shaped like Ramen, but have minimal ingredients list and 0 fat. Can get them in my supermarket as well.
A friend introduced me to kelp noodles too. They have little flavor themselves, but absorb flavor really well. Haven't tried them as pasta yet, but they worked well in a stirfry.
There is also something called [tofu shirataki macaroni] (http://www.amazon.com/House-Foods-Macaroni-Shape-Shirataki/dp/B004YE2FP6). It is not purely konjac, so it has some calories, but still quite keto friendly. I made mac n cheese with it, and it was pretty good!
I use Miracle Rice that I buy i bulk from Amazon. I've done things like cauliflower rice and mash, but I have to admit that I'm just ridiculously lazy. The texture isn't spot on, of course, but it works.
I rinse these very well under cold running water in a strainer. The package says to boil them, but like I said, I'm lazy. I just cook it in the pan with the curry or whatever sauce or meal I'm making. It helps to absorb some of the flavor, too.
