Practically speaking, can you just replace the AC with a standing unit? The vent would still connect to the window but wouldn't be visible from outside.

When you are putting water into the unit, and it is "consuming" the water, you are humidifying the room.
If you are taking water out of the room, and dumping/pumping it somewhere else, you are dehumidfying the room.
Neither of these actually cool the room and only give the feeling us that they are cooling/warming the room. The lower the humidity, the cooler it "feels" to us humans. It is still the same temperature howevever, actually warmer because it requires electricity to run it.
The only thing that will cool a room is an air conditioner, which you will then need to pipe the hot air out of the room through a tube.

the stand alone/portable models like this are pretty awesome for small areas - spendy though...
Luckily a spot cooler isn't a window unit, it only uses a plastic extension that allows you to place the exhaust pipe in the window without leaving a large gap for bugs/animals to get into. I'm not saying buy this one, but the pictures give you an idea
Well Amazon would have the widest range, for example here’s a baking set I recently got. The quality was good and I think it’s a solid set for beginners (like me) to get started into cake baking.
If you wanna try UK stores though, I can only suggest HobbyCraft. A friend told me about them after she went into one of their stores and she liked it. Their online store has some stuff too but I find them too pricey. For example I saw they sell offset spatulas for ~£5.
I’ve been wondering about this and if it’s possible to just use something like below to just cool a room to 55. I saw a wine shop once use one in the back “cellar” and it worked for them being a very premium wine shop. I have a similar one to this, but you need a window for it.

Edit: this would be a problem for really long term storage with humidity maybe but for a few years maybe it’s ok.

You just need gas to fill it up and it will be a much less hassle down the road, less CO2 worries, and over time will be cheaper (dry ice isn't cheap).
You can probably find it cheaper with more than a 5 minute search like I did, especially if you shop for AC's in the winter time.

Absolutely true but for those really suffering -- or simply wanting a decent night's sleep not drenched in sweat -- a portable AC unit makes a massive difference.

The average price for an 8,000 - 12,000 BTU unit -- which should handily cool a bedroom or living room, potentially more depending on the insulation/natural shade -- seems to be around 250 - 400 GBP. (Sorry, can't be arsed to dig out the pound sign!)
I realize that not everyone has a several hundred quid readily disposable, but bear in mind that it's a long-term investment, not just for this summer -- and this is unlikely to be the last heatwave you see in the coming years...
 
I'm in the US but relying on a similar free-standing unit at home. (NYC, no central air in older buildings.) We've passed the heat your way this year but last summer was unbearingly swampy: mid-30s temps with dew points in the low-mid 20s. (Dew point is what will murder you, not simply the relative humidity.) Evaporation basically stopped happening to any significant degree for several months. Clothes and towels did not dry. Subway platforms were unbearable.
But even my half-assed AC, despite acting up most of the time, made a significant difference. Even if it's only lowering the actual temp by a few degrees as mine was, simply sucking some of the humidity out of the air causes a huge improvement to comfort. And helps your towels dry! Bear in mind you don't need to air condition an entire house, just one or maybe two rooms as a retreat. Insulation works both ways provided you keep windows closed.
 
Edit: oops, yeah, I refuse to give up Celsius despite being in the US now. In case the temps seemed weird.
Definitely a significant project, we know what we’re getting ourselves into! We actually have the frame built and are waiting to put our finishing touches on once we figure out exactly what heating/cooling unit we’rengoing to go with.
Do you think this is overkill for about 90 sq ft? I mean, it definitely is, but I’m not sure what other options we have for year round climate control.

I would recommend against these as they are very inefficient since the ac unit is inside a lot heat goes into the space it is trying to cool. Instead I would get a Mini split AC like this one They are much more efficient as all of the parts that get hot are outside the house.
If you don't want to be mounting anything outside then at the least I would get a portable ac with dual intake/exhaust hoses. like this The reason these are better than the single hose ones is these dual hose ones don't make your home have a negative air pressure which causes it to suck hot air into your house through gaps in doors and windows.
BTW I don't know anything about the individual products I linked they are just examples.

If the temp in the air is above 70 f then the ribbon will get warm. You could buy a small fridge, but the max on thos is usually 50 f.
Best bet, buy a portable ac. Put it a box and store your stuff in there. Insulate the box with foam sheets and thermal tape. The ac cost about 100 online. Search "portable air conditioner ".

Oh hey wow I totally forgot to follow-up. It's actually a different model, a shinco YPL3-10C. Here's the Amazon link with more info, it's in really good shape if you want it for $100 that'd be no problem.
Same number of BTUs as the posted one, same shape, quiet AC. My ceilings are just too high (like 14ft) so it has trouble keeping up lol.

I'm sorry, I just realized I went with the 0.05 inch dynamat instead. Some soundproofing would be nice, but I'm more so looking at the insulation value.

I bought the van used (1995 Dodge RAM B2500 with 164k miles) so there was some extremely minor surface rust in some spots (used an abrasive disc and angle grinder to get rid of the spots)

The brown you see is residual adhesive. I've been told I can simply paint over it with the Rust-O-Leum.

You're right though, the floor is somewhat corrugated already. Since the dynamat is thinner, I was thinking about putting a 0.5 inch foam board above the dynamat as well, but it seems like that'd be overkill...but again, the main reasoning for the poly is to prevent wood rot since there are holes in the van floor (from seats/seat belts etc.,)
