Get some silicone glove to protect your hands from the grains during the squeeze. 150F grains are HOT.

Your 15 gallon kettle will handle double batches of most standard beer. I comfortably made 12 gallons of 1.047 wort this past weekend in my 16 gallon Bayou Classic. Biggest grain bill I've managed in that kettle is 10.5 gallons and 30lbs of grain for an old ale. Use this to determine your volumes: http://www.biabcalculator.com/

FWIW I don't find the thermometer or valve to interfere with the bag. I just pull the bag opposite of the thermometer and it's not an issue.

I also like to keep hops out of my fermenter, mainly because I want my fermenter filled with wort not hop sludge, so I use this 400 micron basket. Works great. I don't filter anything else out of my kettle (but I do make 6 gallons so I can leave some behind).

How do you plan on insulating the kettle during the mash? I use some duct wrap from Home Depot and a sleeping bag secure with a bungee chord, fwiw.

If you never want to have problems with lighting charcoal:

You need:

  • Weber Chimney
  • Weber Mitts
  • Weber Starter Lighter cubes

    No need for paper with the cubes and one is enough. (still will make some smoke) And the mitts are great if you want to go fast without burning yourself.

    For charcoal I use:

  • Costco maple charcoal

  • But first I put some normal charcoal at the bottom of the chimney to hold the small bits in the chimney.

Pouring boiled wort on the grain bed will not help efficiency. The concentration of sugars in the sparge water needs to be lower than the concentration of sugars in the grain to extract more from the grain. I heat up an extra 1-2 gallons of water to 170F on the stove when the mash is done, then sparge over a colander like you described. It's hot and sticky, but it definitely helps with efficiency. Get yourself some BBQ gloves if you don't already have some.

My wife got me these for Father’s Day.

gloves

They are great. I actually want to get a second pair. One for the pit and one for the kitchen.

They allow me to move smoking wood and coals around with my hands in a pinch and are great for hand shredding meats, pulling stuff from the pit, etc.

Get a silicone oven mitt or two. Handling stuff is not quite as easy as with using cloth gloves, but they insulate much better and are completely immune to liquid spills. Get some long-sleeved ones and they will protect your wrists and forearms, too.
