My mother gave me this sampler for Christmas one year. I have no idea what posessed her to choose that particular gift, but it turned out to be one of the best she's ever gotten me. And since my wife and I use these so sparingly as accents for meals, it's lasted two years and counting.

I have the air popper and really enjoy it. It's a single use device but I use it all the time. Here's what I do and everyone seems to love it:

  1. Coconut oil on top to melt. Add before the next ingredients so it sticks.

  2. Fine salt. The Flavacol might work, but I prefer a finely ground salt. I use this. Any salt will work, that was just the finest salt they had at the grocery.

  3. Costco's No-Salt Seasoning. I love this stuff. It's about $8 or so for one container. $14 on Amazon (it'll last a while). I use it on all sorts of things.

  4. Nutritional yeast. I get it from Trader Joe's but most groceries will have it. Get the smallest container you can, you won't need much. Put in an empty shaker.

  5. I've only tried two types of popcorn. Bob Redmill White Popcorn and Trader Joe's Yellow. I prefer Trader Joe's Yellow so far. It seems to pop better with less kernels. Either way, a small bag lasts forever. It took me 3 years to finish this.

I've seared steaks and roasted veggies with it ,and have added it to my sourdough before baking. Awesome stuff.

Add it to your Umami ingredients. It isn't as permeating as fish sauce.

Btw the truffle salt adds a ton of flavor to anything, and because it’s so strong and flavorful, you can use very little so you don’t wind up adding more sodium than you need to still get the flavor. I put it on literally everything. I recommend this one

I got Salt for Life on amazon and it has 180mg of potassium and 140mg of sodium per 1/4 tsp. I add it to 8oz of water about 3-4x a day. Sip it slowly in addition to plainwater. Spread out slowly through the day.

In addition I also use it to season food.

How are you doing on magnesium? Because low magnesium might cause heart palpitations.

Iodine alone without cofactors can make for an unpleasant experience, what you're experiencing isn't unusual.

I have a few suggestions, but I do not know what is in your chaste berry supplement and multivitamin so be sure to check them for selenium/selenomethionine so you don't take too much.

300-600mg magnesium (malate and taurate are good ones)

100mg B2 riboflavin twice a day (the yellow component of a b-complex)

500mg niacin twice a day (use inositol hexanicotinate, usually called "no flush" niacin, 500mg of true B3/niacinamide/nicotinic acid will ruin your day)

200mcg selenomethionine (be sure to check the multivitamin and other supplement for this, you don't want more than 400mcg in a day)

1,000mg Vitamin C (3 times a day)

1/2 tsp Celtic sea salt (Redmond Real salt works too)

I believe these will help you see a welcome improvement, this is a great baseline to start out with.

A certain family member has switched to no or low-sodium-added everything, uses just a light couple shakes of Morton Season-All for all savory dishes (nothing else), and finds black pepper too spicy. His or her gravy is whatever greasy droppings are in the slow cooker plus low-sodium canned broth thickened with corn starch. I bought a purse-safe small Tupperware salt shaker that has a spicy seasoning salt blend and a little msg. It helps a lot.

Himalayan salt is overrated. Celtic salt is a decent choice, but this is my default:

We do something very similar to your recipe, which also works well in a crock-pot. :)

Rather than banana leaves, you can get actual ti leaves at some grocery stores and florists for a slightly more authentic kalua pig taste. The leaf choice doesn't make a huge difference, though. If you get them from a florist, see if they have any that haven't been treated with chemicals (fungicides, preservatives, or whatever) and wash them thoroughly.

I also recommend getting the real Alaea red sea salt.
