Amazon has a ton of awesome stuff for kids for pretty cheap. Anybody who only has ~$5-$10 to give should take a look at this list and organize helping someone in need from this thread. I had a similar thing trying to take a pass the bomb game through security. They did not believe that a plastic cartoon bomb was not a threat and so confiscated it, despite me being able to show them that it was a plastic shell full of cards...
The year after my younger brother tried to bring scissors onto the plane. We now don't carry hand luggage so we can't make these mistakes.

Get a National Parks pass and make the traveling part of the trip longer. The National Parks have a junior ranger program where the child gets a "passport" and can pick up stamps and learn different information at each park.
Definitely print off some simple road maps and have her track the journey by reading road signs and noticing when you pass different towns.
Do the research and look up local "color" along the way. The 200 mile drive to my grandparents' goes through middle-of-nowhere Ohio, but we'd stop at Annie Oakley's gravesite (and I had a book about Annie Oakley to teach me who she was and get me all excited).
Road bingo is a simple game to keep kids occupied for a few miles. Be careful to choose either an Interstate or a Highway variety, depending on the type of driving.
That said, try to get off the Interstate a lot. You really don't see much of America traveling along the interstate highways. It's the state highways that show you the flavor of the regions (think Route 66 vs I-40).

If you speak french, Les Loups-Garous is a really nice game for large groups.
If you are looking for a board smaller than like 40x40 cm (15x15 inches) I'd recommend magnetic pieces. Otherwise, small chess sets tend to feel awkward in my opinion because you disturb the surrounding pieces every time you make a move.
