I assume he's a kitten? Up to three months old cats generally are super bitey because they are infants learning their litter mates limits and sticking everything in there mouths. This will likely end by like 6 to 10 months naturally, still worth training though.
Dogs and cats have kinda similar bite inhibition training (aka the big ones being dramatic like owie or like no bad and shoving off with a paw) so the dog may help but I would not keep them around each other without someone to keep an eye for a while.
I think that's enough but for the first 8 months his energy will be endless. So don't feel bad he's up at 3 am like hey play? You essentially have a 6 year old on a sugar high.
Depending on the size of dogs I'd get some toys, and a way to keep a dog out of a room like a baby gate or area so you can leave small cat toys out. For a kitten I highly suggest a box of random assorted toys to find what they like, and avoiding cat nip filled ones. You don't need all these but if your family wants to get the kitty presents for Santa these are my suggestions at a young age.

This is super long but tdlr, your doing good, he's a kitten, he wants to play a lot when he's nibbling, here's a shit ton of cool cat stuff.
Firstly, make sure to post pictures when you bring him/her home!
Siamese cats are very smart, and that means they bore easily. My kitten (~9mo) loves to play fetch or with the feathers on a stick because we are interacting with him and paying attention to him while he plays. But really, each of my Siamese cats (like all cats) has had his or her own favorite toy, so get little things here and there as you see them and just note what yours likes! These are my kitten's favorite. He is seriously obsessed. I get them much cheaper from a pet store near where I live. But my older guy prefers these, which I find at Wal-Mart.
I would suggest making a "warm box" with a heating pad under a soft blanket and maybe something over the top so you kitten can hide in a warm and cozy place, especially when he/she is stressed out after the move.
Another thing that I would consider an essential is some sort of perch for your cat to get up off the ground and observe the room, like a cat condo or something similar. I made one out of scrap wood and carpet, so it doesn't have to break the bank. :)
SCRATCHING POSTS! I personally do not have the patience for putting the little nail caps on them, but I find that if they have different options for scratching, they resort to the furniture less.

I'd go with the chocolate point if you want an active cat. He's already putting himself forward and wants a lot of attention. Also looking right at the photographer, so that implies more than usual intelligence.
Admittedly, this is a lot to conjecture from a couple pics, but hey, you wanted opinions.
Or, you know, get both of them, why not? Two meezers can keep each other company while you're at work. They do need company, lots of it.
Protip: if you haven't had a kitten before....lock up everything breakable. Kittens gonna kitten.
Cheap thing to keep kittens super happy, get a bunch of boxes, duct tape them together to make a fort, cut holes in them as you go, make a maze. Don't bother making it pretty, they're going to beat it to death anyway. And make sure that every box has a way for you to reach in and grab the cat if it's sick. Sometimes they hide when they're sick.
We did this - thing was hideous, but man, the kittens LOVED it. More than any cat tree, because it had places to hide, which cat trees don't.
Also, if a kitten disappears, don't panic. They are ninjas at finding weird places to nap in. Found ours in the coffee table's drawer one time, astounded that they all got in there. Mama was freaking out yowling, kittens were all, "haha, can't find me". Imagine my surprise when I opened the drawer and it was full of kittens.
EDIT: Meez points develop when they're not wrapped in heated blankets all their lives. They develop on the parts of the body that are most chilled, and it doesn't take much, just everyday walking around. All cats love warmth, and getting them a heated sleeping pad from cozywinters won't affect their color.
Mine got a nasty sinus infection and half his face turned white due to it burning him up inside there, but the other other half stayed dark gray. He looked extremely weird during this phase.
I've had my Siamese for almost two years and have tried several different litters. Luckily, he's never been picky even when he was a kitten. I found the latest one I bought is the best one at masking unwanted odors; it's made from crushed walnut shells. I get it from Amazon .

I'm a veterinarian and here's what you need to know about clawing cats.
No matter what you try everything will be useless unless you have a proper scratching post.
A proper scratching post should be 2 inches taller than your cat when it streches out all the way.
The post MUST NOT move when your cat uses it.
You want something heavy enough that your cat could leap on it and climb it with minimal shaking. An unstable scratcher looks like a leaning tree: potentially could kill me. Hanging door know scratches are worthless and your cat knows the door moves.
The post must be covered in something attractive: sisal, cardboard, real wood etc.
You'll see all carpet scratchers which are the best way you tell your cat not to scratch here unless they ONLY love to rip up carpet.
The scratcher must also be your cat's preferred configuration.
If your cat scratches vertically on the side of the couch then the post needs to be vertical. Ho a cat that loves your chairs seats? Must be a horizontal scratcher. Many cats need both.
*The scratcher must be where your cat wants it. Put tinfoil (monitor to make sure your cat won't eat it) or double sided sticky tape on the scratches and put the post right next to the scratches to say "scratch here, not here". Looks ugly? So do the scratches. Do what is necessary.
Buying a short, all carpet kitten scratcher for an adult Siamese guarantees your cat won't use it.

The next step which is critical for your cat is regular manicures by a professional groomer or vet or you who will take the time to feed your cat and desensitize it to nail trims. There is great website by Dr. Sophia Yin which has a video on desensitizing dogs to nail trims. For cats I like chicken baby food, cream cheese or butter. This needs to be done about every two weeks to prevent splitting until your cat has a proper scratcher which it uses to manicure them itself.

Now, I'm assuming you've tried all these things. I'm going to my doctor but I'll post about declaws, what they are, what to expect, who does them reputably, etc. once I get back. Spoiler alert: I don't do 4 paw declaws.
