I consider myself a newbie in the hotsauce arena, but I've been enjoying at least 1 new bottle per week for quite a while, and have found that the more I learn about the range of sauces and varieties that are becoming popular, the more exciting possible flavor combinations there are yet to discover.

One I've enjoyed so much this year that I've purchased it 3x over is called Ass Blaster: http://www.amazon.com/Ass-Blaster-Hot-Sauce-Flavor/dp/B000G6PUZS

It's pretty great. Yes, there are many that are hotter, but this one definitely packs a good punch. It does include extract, but not enough IMO to be too prominent. It also includes carrots, which I really enjoy in some sauces. It is sometimes packed in a novelty wooden 'outhouse' box, but if you're just looking for great sauce, don't bother spending money on the box. Just get the bottle. It's great.

3 others that I've enjoyed recently are:

  • Black Rose from Pepper Palace (decent heat but deeply rich pepper taste)

  • Trinidad Scorpion
    &
    Reaper Sling Blade, both from from CaJohn's Fiery Foods.
    None of these 3 are terribly competitive in terms of heat. (heat seekers should look elsewhere) They have a moderate but satisfying burn, but they all have a rich and robust pepper taste. Sling Blade is especially on my short list of re-purchase items. I plan to always keep that one stocked. It might even unseat Ass Blaster as my current favorite.

You can force the finished sauce through a wire mesh strainer using a large metal spoon. This will leave behind all the larger fibers and seeds, but allow the microfibers through, which is what you want to emulsify the sauce. This procedure gets tedious if you're processing more than a couple quarts, though, and in that case, you want to use a food mill or better yet a food strainer.

This might alleviate the separation problem as well, though if your sauce is very watery and you're still getting separation, you may need to stabilize it with starch. A very small amount of cornstarch. (i.e., 1/8 tsp per quart) added before simmering won't appreciably thicken the sauce, but it will help emulsify it and prevent separation during storage.

The best standard vinegary hot sauces from Mexico, imo: Tapatio and Valentina. Try them if you get a chance. They're nothing like Tabasco (which I hate, and it's from Louisiana, US).

This book is used to help encourage people to get treatment for their mental health issues. Get the audiobook, it's only about 4 hours. It could potentially the thing that drives you to a therapist/psychiatrist. Depression is very real and if left untreated can be fatal. Please sit and listen to the audiobook. It's on audible but you can probably torrent it. Good luck.

[Mad Dog 357 Pure Ghost] (Mad Dog 357 Pure Ghost, 5oz https://www.amazon.com/dp/B0030J4YTG/ref=cm_sw_r_cp_api_tVqDAb5ZWQPDZ) is one of my favorite hot sauces. Solid amount of heat and the flavor is fantastic. It has kind of a smoky flavor to it.

It’s probably my favorite hot sauce and I literally just ordered one as I looked up the link for this post (thanks for reminding me - I was running low on my last one).

I recently found a sauce that is a medium heat level , that complements everything that i put it on. Its called aji sobremesa hot sauce. It's made with yellow Peruvian aji peppers and its soooo good. Found it on amazon. Here is the link:

Tabasco is hotter. And it's available by the gallon for $40.95gal. They also have Tabasco Habanero in gallon jugs for $46.75gal. Tapatio has a good flavor, but as far as heat goes, it isn't very hot at all.
