This is enough for lights (Florescent LED or , not incandescent) all night + laptop + few minutes of kitchen appliances. You have to have enough battery to last through the night. Figure about one solar panel per battery if you use it during the day (radio/tc/computer/fans) because the battery has to be full up by night.
This is very minimal to get above camping level. Maybe 2 more batteries and 2 more panels for a refrigerator. If you go past this, you have to level up for about $2k more and get a large inverter. Everything you can add in small increments, but the inverter (and charger) is the large not so expandable part.
Spending about $5k and doing the work yourself should give you about the same amount that you'd have with a grid connection and unfortunately there's no upgrade path from a very minimal small system. But there's nothing that prevents you from having separate systems for each appliance.

I'm pretty new to this too, this is just what I've come up with from doing research and assessing my (basic)needs. I would like to hear other opinions as well.
It was a 1000W Power Inverter I went overkill for most on this, but I wanted to power a chainsaw if needed, otherwise you would only need to put in $37 for something 400W
Most of what I got was from Amazon.
I have no idea why more people don't have a power inverter: You simply attach the clamps to a car battery and you get power.
They come in Low-Range, Medium-Range, and High-Range. You can even get an Industrial-Model for long-term use.
You most likely need a power inverter. Most inverters come with clamps just like you would use on a car battery. Check out the eplaya power and illumination subforum for more info
You could get an AC Inverter and plug it into the cigarette lighter/accessory port, turn the amperage down to like 7 or 8, and wait a few hours to get 10 miles of charge.
Alternatively, when you're the one driving the nearly-dead Tesla, pay attention to the copious warnings it gives you to prevent this kind of situation, use the nav system to find an RV park, give the park owner $10-15, and plug into a 30 or 50A outlet for a bit.
Depending on your camper, there might be none.

I would not bother with the larger because you can just fire up the generator and run almost anything. Since you are in a class C with only two batteries, a large inverter will flatline your batteries pretty quickly if you try to run something at high power for any real length of time.
Also check your park rules because some parks only allow generators during certain times of the day.
I'd also recommend replacing the conventional light bulbs with LED bulbs. Incandescent can make a surprising amount of heat and waste precious battery. If you have time to order from china, it can be pretty cheap, but remember to order extras and take them with you. Some will have 'birth defects' and die quickly so you want to replace them.
Remember that it can take longer than you might think to recharge your batteries so make sure you pay attention to how they are doing. Dead batteries in the early night can really suck if you need that fan, lights, or water pump. You'll get the feel for it though after a few days once you see how much they burn down overnight, recharge etc.
It's better to be safe than sorry. You don't want to bring out all that gear only to find you can't turn it on.
You'll be fine with any of these with the top one being your best candidate. Just remember to be courteous to your neighbors if people are trying to sleep!

You'll probably want to get a fuse holder and a cable kit depending on how far you expect to keep the table from your car.
You could also go the more environmental route and get some solar panels to juice up a spare solar battery each day.

My thoughts on the 1000w inverter is for as much power as possible, if there were ever a black out in the area. At least this is how I understood what I was reading. Can you shed some light on why this makes no sense with a 50w panel? Should a 50w panel only be paired with a certain inverter?

Maybe I have completely misunderstood your goals here, and I apologize if that's the case.
Are you looking to be able to power your laptop, tablet, phone, photography equipment, etc off this system using CAT6/7 cable? If you just need power then something like this would probably work very well. PoE is great for things like remote access points, but it wasn't designed with higher power applications in mind.
suggestion: Generic 12V DC to 120V AC power inverter (example), a car battery and use the amp you already own?
bonus: the inverter is a handy thing to have lying around anyway (I've used mine during power outages more than once).

You can add a second battery, upgrade the charge controller to a MPPT, and get a real sine wave inverter and kick this system's butt for less than he is asking. You need to buckle down and do some research.
