Hey! I use a surface too. The best way to make things work for me has been using photoshop with the coolorus add-on and a shuttle xpress that I mapped shortcuts to like alt, shift, clear, and the big wheel changes brush size.

You can buy/make a macro board if the extra wire doesn't bother you.
Something like the KNOPS Mini Macro Keyboard or one of the MAX Falcon macro boards or any of the DIY ones out there, you can reprogram them as dedicated media controls.

If you really want seperate hardware input, here's a normal looking one for around $40, and I'm pretty sure you can play something fierce with this one for $80.
Alternatively, you can use autohotkey as /u/roboticaa mentioned. If you're not too familiar with scripting, I can write you one real quick to the keys you'd be comfortable with.

I wasn't sure if your US or UK or somewhere else but there some examples I think should work for your purpose.
How about just physical knobs for a ton of different things
Yeah, that exists. I hear it's actually pretty awesome and has some good uses in AV editing and whatnot (scrub timelines in Premiere/Audition/Ableton, contact sheets in Lightroom, etc.)
There are also more specialty devices such as the Contour (Basically the same, but with programmable buttons) or 3 dimensional mice which have a niche market in CAD applications.
You should have checked whether or not your preferred apps worked with it before buying it. Perhaps sell it and get an alternative accessory?

I might resort to Autohotkey to kill the Windows key, though for the media keys I was pondering trying to find some sort of external USB controller. I would love something like this, but it has no real release date. A cursory search hasn't really shown anything though, but I'll keep looking.
