More ram will almost definitely not help your monitor issue, though it might be nice anyways. I would continue troubleshooting that, you should have NO issues runing 2 monitors on that.

If you do want more RAM: $120 is a lot of money to pay for 16gb of 2133mhz DDR4 ram. You should be paying less than 1/2 that. Here's some 1x8GB for $37, have at it.

Hey, I built a PC one and a half year ago and only sticked 8Go of RAM in it. I'm shopping for a second 8gig stick now.

Will this be compatible with this stick that is in my build now? I have no understanding of how CAS latency works.

Ok, first, it's a strange idea to bet on a I5 and NVIDIA when you're stretched by a very small budget since ATI and AMD are way cheapers, and not worst.

Anyway, i tried to build something very nice from Amazon, which is an other strange idea because if Amazon is really nice for his customer support, he's not as good as you may think to buy at smallest costs. In France (i'm french, by the way), you should really take a looks at large online supermarkets like CDiscount, etc.

Thus, there's the result. I provided you the link to your goods, on Amazon.fr and Amazon.de. Sadly, you didn't included Amazon.es or Amazon.it, they're cheaper for the CPU and the RAM.

In the end, at my opinion, you're too young to build a PC by yourself. The PS4 looks to be a better idea.
