I understand. Maybe go for a less expensive one like this: Corsair H60 for half as much? Have you seen the Prism cooler that comes with the 3700x? It looks pretty cool to me and if you used that you could get extra 2 cores on your processor which would have a lot of value in the future IMO. Just a thought.
I have no idea how to install this water cooler, as you can see the brackets included do not fit my mother board (square back thing) any help would be much appreciated thanks.

Well, that case isn't ideal, it looks like it would be easier to install liquid cooler there because if you are not good with hands, the bigger air heatsink in that small space can be harder to install.

It depends what you want. Traditional Air-to-heatsink, an "All-in-one" water cooling, or a custom Water cooling setup.
Air cooling is cheaper, but overclocking and stressing the cpu will be harder to achieve.
If you choose water cooling, your choice of computer case can determine the size Radiator you want.
Usually by 120mm, 240mm, or 360mm radiator.
The larger, the more costy.

Feedback on intended use:
Casual streaming and gaming without too many hiccups screams 8 core CPU to me. You're good in that book so the Red vs Blue debate is something I don't want to write an essay on. Your choice really.
Performance Feedback:
Here is where red wins because of price alone. If you only want 1080p gaming with streaming active then a 3700x is your winner. You will enjoy that 144Hz monitor, but hopefully you are into shooters/FPS games because that is a strong monitor for your needs.
Budget Thoughts:
In looking at the bottom dollar there is room to invest a bit more and my answer there is COOLING. Don't build a $1000+ machine and then go stock cooling or get the cheapest air cooler on the market. You are using nice components. Overall:
Your monitor, CPU options, and GPU is a win. Great selections for the top of mid-tier performance. I would say up the memory to 3200MHz since the prices are virtually similar, go bigger on storage (2tb HDD and 500GB SSD) so you can save and edit videos if you enjoy streaming, and as I mentioned before think about using a better air cooler or investing in an AIO like the one I linked or better.
