22 AWG stranded wire is pretty standard for wiring anything.

i usually buy these, as they're a good price, 2 day shipping w/ prime, and its a nice multi color kit, which helps when wiring...in case you have to trace the wire back to the board when debugging. plus everyone likes colors:

use shielded wire (with the 'shield grounded') for any audio signal inputs/outputs if you get noise. not 100% necessary, but might be worth it in the end for the sound quality and reducing any noise.

You could use this - available from Adafruit as well the last time I checked.

I used this. Cheaper by length, but it does get confusing with only 1 color...

I bought a set of 24 gauge hookup wire in 6 colors, which is very helpful for keeping things clear.

I’ve also found that heat shrink tubing is helpful for insulating loose joints (eg direct connections between LED and current-limiting resistors) and offering extra color-coding options.

I've never used CAT5 but I can say that 22 guage stranded wire works for almost everything, including the hot end. This is what I used:

You will want some 16 guage for the PSU to board wires and for the bed, but the heater pad already has long enough wires on it.
