The only thing I see is that the power supply looks a little small, and while it seems to get good reviews, I've had no experience with SeaSonic Power supplies.
I would consider going up a bit in PSU size to more like 650W-750W. I've always had good luck with Corsair and EVGA PSU's.
For a little bit more, you can get this EVGA 750W fully modular PSU which Amazon has for $89.99 and unlike the one you have picked out, this one is fully modular, which makes wiring so much easier.
Never skimp on the thing that feeds power to all of your other components. Also, if you do not have one, you should consider an uninterruptible power supply for your rig. A 1000KVA or larger should be plenty for that setup.

With a GTX 770 that is possible yes. Also if your power supply is older, the capacitors wear out and your effective wattage reduces (which if it was a 80+ bronze let's say, is probably below 600W at this point). I'd say pick up a 750W 80+ gold PSU like this one and see if that works.
The 550 W G2 will be fine if you're on a tight budget. The 650 W G2 is preferable for overclocking and upgrades in the future.
Everything looks pretty solid. However, if I were to change one thing, it would definitely be the PSU. Since it seems your budget is around $100 for that specific part, I would definitely recommend that you use the EVGA SuperNOVA 750 G1 80+ GOLD psu instead. It's reliable, has more power for around the same price as your corsair, and also is covered by EVGA's extremely dependable 10 year warranty.
The gpu is not overclocked, the temps were well below 95c (around 65c), and there were no issues when I tested the card in 3DMark (Firestrike) after rebooting the pc. Rocket League might be the issue.

I can't really do the research on all of those, but 650W should be good enough for your needs. The thing is, if you're going to spend $100 on a power supply, you can get more. Again, Radeon uses more power, my friend has a 295X2, he uses a 1050W power supply. Does he need it? Probably not. But check your graphics card. PCPartPicker has a TDP value (total draw power or something) that tells you exactly how many watts your PC will draw. I would give yourself 100W or 150W extra just to be safe.

That'd be personal opinion. I'd change the case to this one for $1 extra. Also I think the power supply is expensive and I'd go with this for $15 in savings.

that's a little more than i'm looking to spend. remember, my total budget (tower case and everything) is probably going to be around $1,500, and even Nividia is asking $800 for the RTX 2080. and i don't want to skimp on the cpu or the mobo, either.
