Loads of people have used this one on Amazon. It's $9 and it comes with next day shipping if you got prime and Amazon benefits like free refund if someone steals it off of your porch.
I have it and its 100% confirmed working on loads of random devices including emulationstation projects. The ports are backwards for some reason though. The controller port on the right side is port 1 and left side is port 2

I have this one, this one, this one, and this one.
The SG is about 25-30ms behind every other guitar I have, which is a lot.
It's playable, but fiddling with the calibration setting in between hitting the notes too early so they break on the strikeline, and hitting them at the correct time where they don't go past the hit window is annoying, and there's no reason to deal with that.

Download OpenEmu and find a Spyro 2 ISO somewhere. It runs fine on my MacBook (it's only a PS1 game). Playing on keyboard is tedious though, get an adapter to use a controller.

This is the one I use. Whether it's the best, who's to say? It works for me and I've had no problems with it.

I'm using a variation of this adapter with original PlayStation DualShock controllers. When the PSC booted up after putting this new AB release on the USB drive, it only asked to map one of the controllers rather than both. There seems to be no way of separately mapping the second controller within AB, so it's also mapped the same exact way as the first player. I did not try mapping it separately within the emulator's settings, but I was hoping it would just natively pick it up from the initial AB mapping because it's a real pain to have to map the controller for each game every time I open it. Also, neither the D-Pad nor the analog stick seem to work on either controller if I select that the D-Pad is not analog. I don't believe the original PlayStation had an analog D-Pad, so I'm not sure why that is. Not a major issue, just something I noticed.
It just needs to register in Windows as some kind of controller. Once that happens x360ce will work.

Hopefully one of these works. I've never tried to use either of those kind of adapters for old game controllers to PC. That's why I said "milage may vary"
I believe this is the other one they recommend. I'm unsure if it will allow two guitars simultaneously, but hey it's cheap.
I have this dual adapter. OpenEmu detects both ports, but I can only configure the buttons for one. The controller works in game. I'm surprised since none of my Raphnet or Mayflash dual adapters work with OpenEmu. I can usually configure the buttons, but the controllers don't actually work in game.
Edit: I forgot to mention this is with Mojave (10.14.5) and OpenEmu 2.0.9.1
