You want to get a 2.5mm (male) headset splitter to 2x 3.5mm female (one for the mic, one for the speaker): example.
this is on the right track, but you need something a little smaller since the headset jack on the controller is a 2.5mm, and the plug on standard headphones are 3.5mm ... OP, try something like this. With a little digging, you may be able to find something cheaper... but this will do the trick.
