I most often sous vide in an Igloo Playmate cooler. It's the perfect size for smaller jobs. I also have a 12-quart polycarbonate thing I'll use when I need more capacity.
You can use regular pots, but you'll be running the sous vide machine harder than you would in a container made of less thermally conductive material.
