I know I'm not really answering your question here... but we just installed 5 more foot of cabinet space and my wife wanted some under cabinet lighting. I looked on Amazon and most of the stuff was pretty expensive.
I opted instead to do LED strip lighting and ordered 32' of it + transformer + dimmer for the same price as 24" of any of the other solutions. The pluses are:

You will also need 12V power supplies for it. I have light-switch-controlled outlets in my apartment. Other people go with complex IR-controlled dimmers and such.
if you want individually addressable LEDs take alook at something like this: http://adafruit.com/products/306 you'll need something like an arduino to control them though.
If you want to just change the color of all of them at once then there are cheaper options like http://adafruit.com/products/285

The setup I have patiently waiting to be installed uses these flexible, trimmable LED strips from Amazon. I was facing basically the same issues as you, so I'll end up mounting the LEDs along the top and entire length of both sides of the door frame. At the junctions between strips and corners, you can use the connectors sold in multi-packs.
I chose my power supply wattage based on this PDF from a manufacturer. Some supplies are sold with an AC cord and plug, and some are available with a hardwire option.
Rather than a motion sensor, I opted to use a jamb switch I picked up from Lowes. Just another option to consider.

It's really nothing fancy. The ceiling fan light in my room doesn't work, so I have a lamp about 4 feet to the left. The desk is dark brown/black, so it was kinda hard to do schoolwork on. I just bought a reel of LEDs, used a 12v adapter from an old wireless router, and a relay. The Arduino turns the relay on/off, so the LEDs go with (but opposite) the relay. I'm not exactly great with creating things like this, so I accidentally reversed the relay. When it's on, the lights are off, but when it's off, the lights are on. I'm going to regret doing that some morning at 3:30 AM when the computer shuts off...

What is your thought on neutral white versus warm white? Looking at the two of them via this I think that neutral white is a better white.
Assuming I'm calculating right, these strips are 60 lights/meter and that's only like 4.88 watts/meter so the size of the PSU should not matter at all, just any 12v will be enough to supply it.
I recently added LED lighting to my closet and gun-cabinet using these:
LED Strip
In the closet I added a motion sensor (this one)
and a power adapter for 120v to 12v. Has tons of light and it's awesome having it be motion activated.
In the gun cabinet I used the same style LED strip, but am running it off of a battery (this one) and a toggle switch.
I could easily run another motion sensor in the cabinet though, that might work out better for your scenario. If you have the room for the battery you can just secure it with some double-sided tape, add the motion sensor and have it run an entire strip of the LEDs (it'll be very bright), though you might only need a few sections of LED.
