Dried veggies. One of these lasts me a good 2-3 months, and it's great for things like adding to ramen on days when I'm too lazy/tired to cook.

I have the same problem. Last week I finally sucked it up and did some meal prep for the slow cooker. It's so nice, thaw over night and dump in the slow cooker before you leave for work. Followed this, there's even a shopping list.

Edit:. I usually use boneless thighs instead of breasts in the slow cooker.

Another option is to pick up a rotisserie chicken and use that for salads, sandwiches and soups.

If I'm super lazy I take egg noodles, pre cooked or canned chicken, dehydrated veggies and chicken bouillon for soup. If you use canned chicken, all that stuff is shelf stable so it's a great meal when you forget to shop. It's quick and easy, and gets better as leftovers.
