The least complicated way is a wii2hdmi dongle: https://www.amazon.com/Musou-Converter-Output-Upscaling-Adapter/dp/B015H7PICK

You can use a composite to HDMI converter box (typically $15 or more depending on the brands) such as https://www.amazon.com/Converter-Superior-Composite-Upscaler-Supports/dp/B01M3VOT0U

For audio you can either get a cable that takes composite left and right cables to 3.5mm like this: https://www.amazon.com/3-5mm-Male-Right-Audio-Female-Adapter/dp/B003LVDWOQ to plug into a speaker, or plug the l/r composite into your audio system, or use the projector audio out and just connect it all through the converter box.

I'll plug them directly into the consoles and then connect them to an HDMI switcher via HDMI, and then connect that to the DVI to HDMI in the monitor. Then I'll re-route the audio into a pair of speakers using a 3.5mm to RCA adapter for each one.
Would this work better, or just about the same?
