get one of those desks that have the low hanging cable hiding backboard on it (you could literally modify the desk with a piece of plywood nailed to the back of it) so that people cannot reach the cables with their feet (they just hit the board, and the cables are behind it), or one of those cable cages that can be bolted to the underside of the desk (like this)

You can get a basket to hand under the back of your desk like this or used a sleeve like this to make it a single group of wires like this.
