First, you’re going to have to get a metra dash kit. Here is a link: https://www.amazon.com/Metra-Installation-Chevrolet-Equinox-Vehicles/dp/B005G0AYYG
And you will need an aftermarket Double-DIN radio head unit. There are many options out there for that but you will need a head unit that supports Apple Car Play.
One good head unit I would recommend the Pioneer AVH-1300NEX: https://www.amazon.com/AVH-1300NEX-Multimedia-Receiver-Bluetooth-SiriusXM-Ready/dp/B073BNFTV7/ref=sr_1_3?keywords=apple+carplay&qid=1573091130&s=electronics&sr=1-3
There are many more head units out there which support car play, so I recommend choosing one which you think is best. However keep in mind that you will need BOTH the dash kit AND head unit.

You can get a chinese radio for $30 but if you plan to keep using your car for some time it would be better to go up one notch and put something like the Pioneer FH-X720BT, i know CDs are in extinction but for a little price difference you still have the option.
You need to get the mounting kit, and the wiring harness. Installing it is not that hard, if you can splice some wires you're set, the wires in the radio harness and in the adapter are color coded so you just need to match them.
Here is a video I made demoing my NC Nexus 7 install. It is very basic now. I wanted to see how little I need to get audio working. It isw working better that I expected. Let me know what you think or if you have any questions.
Edit 1:
Parts and pricing(includes shipping) list:
Total: $88.81 + the cost of a Nexus (2012) which is about $150-$180 depending on which configuration you get. (Note: Timur's ROM only works with Nexus 7 2012)
So $238-$268 grand total.
I also bought a wire stripping and crimping kit - http://www.amazon.com/gp/product/B000K7GRCI/ref=oh_details_o09_s00_i01?ie=UTF8&psc=1
And a Dremel for cutting the metra bezel and the command hooks
I also rooted my Nexus 7 and installed Timur's rom. That was a headache and not needed because you can duplicate the functionality by using Tasker, a Nexus 7 task scheduling app. But to install Timur's ROM basically you need to unlock the bootloader, install TWRP recovery, then install Timur's USB Host ROM. That ROM gives you the ability to plug USB devices like thumb drives into the Nexus 7. It also gives you the option to put the tablet into deep sleep when you turn your car off.

SPDIF for stock amp tie-in if you want
The370z.com diy section has a bunch of tutorials. It took me about 8 hours to do a total replacement including headunit, door speakers, adding rear speakers, an amp and sub, backup cam, and usb port in the center console. Removing the interior trim and running all the wire was what took the longest.
For just the headunit, you'll need the wire harness, antenna adapter, dash kit, metra steering wheel control adapter, and optionally depending on headunit a micro-bypass parking break switch as some head units disable some things if the parking break isn't on.

just doing this these days, but I am from Europe. Going the route https://www.amazon.it/MAX-Termostato-radiatore-Bianco-99017/dp/B004W1PSNC/ref=pd_sbs_60_1?_encoding=UTF8&psc=1&refRID=6H1570CBPVP2TQ0SSMJS

The aftermarket solutions are definitely easier and cheaper but they're awful.

The cheapest thing on my list are some metal things to be able to replace the radio in my Saab.
I could use some pants or maybe an AD shirt.
Hope you first contest goes swell! Thanks!
There's a OEM satellite radio receiver kit. I don't have it but I'm pretty sure it integrates with your stock HU.

Buy a single DIN aftermarket radio of your liking.
Buy a single DIN faceplate adapter like this.
Buy a wire harness that will plug into the factory radio connector like this. This will prevent you from hacking the factory wiring to connect it to the aftermarket radio harness.
It may require you to buy this adapter for the factory attenna connect into the aftermarket radio.
Install is pretty easy, search google for walkthroughs if you get stuck.
Does your car have steering wheel controls? If so, you'll lose that feature, there's ways to make it work but they're pricey.

This is the one I used! It says 2010 which is my cars year so I figured it would be compatible.
Should I be looking into getting a different one such as http://www.amazon.com/Axxess-AX-ADFD01-Aftermarket-Installation-Vehicles/dp/B00HJ6OCPW/ref=sr_1_157?ie=UTF8&qid=1459429288&sr=8-157&keywords=Axxess ?
Is this it?

Look into the cost of the dash kit before you get excited about any particular stereo unit. The dash kit fits the new head unit in the space where the stock radio would go. Metra makes a kit for it (99-7524) which is listing at $188 on amazon, so I would mark that up about 50% if you buy local. after you pay for the install and wiring harness, you'll be pretty close to your budget before you even look at the headunit. I've been in the industry for close to ten years, and have no problem helping you out.
you will need this kit

as for radios with navigation built in. they start around $550 and some will have the ability to do apple carplay or android auto. as for satellite radio, most do not come with it BUT they have the ability to have it added easily. usually a $35 to $50 tuner which can be connected to most aftermarket stereos. then you just transfer account to new sirius tuner ID and you are good to go.

The 11 Sonata would be an intermediate difficulty install in my opinion. On a scale from 1-10, it's probably a 6.546.
Here's your dash kit:

So the minimum you're going to spend on something worth a damn is maybe $350 all said and done. Alpine W650 maybe.
You should post a picture of radio you have in there. I believe the 2002 Passat needs special tools to remove. Also, I believe you have a 2 DIN stock unit, and your new head unit is 1 DIN, which means it will need an installation sleeve. A picture would answer both of those questions, also, I would be happy to help once we make sure you have the stuff you need.
