You should try unsweetened ketchup. They sell this stuff at walmart. It's actually damn good. It has a super rich tomato flavor that is wonderful, and you'll go back to tasting regular ketchup with sugar added and just thinking it tastes like processed sweet fake shit.

I also look at the ingredient list on everything I buy, came across this stuff, and won't go back to "regular" ketchup anymore.

It might be because barbecue is largely an American thing, but check next to the Worcestershire sauces in your grocery store shelves; they're good at hiding.

Otherwise, Amazon is always a safe bet (though I'm not sure about shipping prices to Canada... hopefully it's not a problem). In general, Amazon is just amazing for a ton of things you might need, food related and whatnot; you can even get free shipping on a lot of items.

Oh Amazon. Be forever mine.

If I've got nice rib chops I will grill them one of two ways:

  • Filipino Adobo Style

  • Carolina Treet - I generally don't like to buy prepared/bottled sauces, but this one is just too damn good on a chop.


    For boneless I love to butterfly, pound, bread and fry in the style of schnitzel. Serve with lemon, as others have already recommended.

For the sauce: I have yet to find a recipe that comes out better than my favorite BBQ sauce, so I've given up and just buy that one every time. That being said, the sauce should be applied REALLY lightly to let the smoke and pork shine through, so any sauce you like would be fine. I add a couple of good glugs to a big pan of pork and that's it. Helps lubricate things a bit as you mix it up. Then I put the bottle on the table and let people sauce up their pork however they like.

For the pork itself: The beauty of pork butt is that it's damn near impossible to screw it up. If you cook it to 200 degrees or so, it will be fall-apart tender and delicious, almost regardless of what else you did to it. The only way to screw up is to rush it, or try to pull it before it's ready. If the bone doesn't slide right out, or if the pork gives you any significant resistance when you try to pull it, it isn't ready.

My method:

  1. I use a big gallon plastic bag to mix up a spice rub which is roughly (I eyeball it) about half sugar (brown or turbinado), a quarter salt, and a quarter spices including paprika, garlic powder, black pepper, cayenne (if you want a little spice), and onion powder.

  2. This step is totally optional, and I don't always do it because it can be messy: I use a meat injector to inject a mix of apple juice, melted butter, and apple cider vinegar.

  3. I slather the butt with mustard (wait, which subreddit is this?), then coat every possible surface with a good thick layer of rub. Get all up in those crevices.

  4. Ideally, you'll have some time to let the rub get to know the pork for a while. A few hours in the fridge with the rub on it makes a noticeable difference; the salt starts to penetrate and carry the spices into the meat. But it isn't necessary; you can just slap it right on the smoker once it's rubbed and it'll be totally fine.

  5. Get the smoker temp to 225-ish (I don't stress too much if it's 10 or even 20 degrees off in either direction when I put the meat on, just slightly adjust your vents and keep an eye on it). Then don't touch anything for at least six hours unless you need to adjust the smoker temperature. I have a dual wireless probe that I keep in the meat and smoker that minimizes the need to ever open the smoker for any reason, but if you don't have one of those, just remember that pork butt is forgiving and there's no need to check it too often. If you're lookin' you ain't cookin', so they say.

Beware.... Once you try it you'll be addicted. It's smoky and sweet, so if you don't like sweet sauces you can move on.

I made BBQ ribs at the weekend for a bbq, i made a sauce on the fly just by guessing. A couple of squirts of reduced salt and sugar ketchup, a few dashes sriracha, sukrin gold sweetener, salt, and some of this natural smoke flavour.

For the ribs, i coated both sides with Frenches mustard, then made a rub of salt, cumin, chilli, garlic, pepper

The best kind, my friend. Part of South Carolina is known for its yellow barbecue sauces made primarily of yellow mustard, vinegar, sugar and spices.
