Start with an actual allergy friendly cookbook and learn this together. Try a list of things you CAN eat and focus on the abundance of choices you have instead of what is lacking. The change in mindset is liberating. Here is one to start with. It is by a cook that married into a food allergy family. There are a lot of online recipes available now too. I start all my food searches with "allergy friendly recipe" then the item.

I believe the wheat belly cookbook has biscuits that would serve. Unfortunately you aren't going to get the fluffy bun you are used to, but there are some ok recipes out there if you look.

There's a lot of research out there connecting gluten and ADHD and autism. I have't really looked into it, but it looks like lots of people are cutting gluten to manage ADHD. My co-worker was reading a compelling book about it. I don't know the name but here is another example.

Actually, if you are reading Good Calories, Bad Calories, you can skip Metabolic Typing Diet. MTD is just another system to help you determine how your body processes fats and carbohydrates, which imho is the big variable when it comes to diet. But GCBC covers that along with updated information.

IIRC, GCBC also recommends starting with a super low-carbohydrate diet for a few weeks and then introducing carbs until you start to feel funky again, then pulling back til you feel better. This is pretty common practice for a lot of dieticians now. Incidentally, Taubes wrote a follow-up called Why We Get Fat and What To Do About It.
which is a bit of a rehash of GCBC but focuses more on putting the knowledge into practice. IMHO both are worth reading.

I'm also a huge fan of David Perlmutter's Grain Brain, which talks about the link between carbs and the brain and brain disease and imho is really worth a read. It has a couple of follow up books too (Brain Maker about the vital role that gut flora plays and Grain Brain Cookbook).

Since embarking on my nutritional journey, I discovered I have a gluten allergy (explains all those times I fell asleep at the wheel after eating a sandwich). I cut out grains for the most part and eat primarily protein and veg, very little sugar, definitely no refined sugar.
My mood is better and more consistent, brain fog is gone, weight is easier to maintain, and I have more lasting energy.

It's unfortunate that institutions like the FDA and AHA (who are backed by industrial farming corps) hammered the American public with the lie of the one-size-fits-all Food Pyramid and low-fat, "heart-healthy" diets & that the word "diet" carries a connotation of weight-loss instead of health.

Our generation is paying for it with our health.

My boyfriend was diagnosed with coeliacs a month ago. I'd never even heard of it before so I got some books to help. I can really recommend these two, it includes recipes as well as basic information about Gluten intolerance. The Kindle links are under the book titles. Hope this helps! :)

First thank you for your comment; this all is such a learning process and I have found I learn more from others then the doctors themselves.
I want to say I'm sorry you are dealing with all that. You have a couple I do not, (Like the metal problem) I can't even Imagine trying to cope with that one.

We sound very similar as I read through your post here. 
My allergies are as follows: Seeds, Tree Nuts, fish, shellfish, Iodine, latex, Wheat/Gluten, Milk, Most antibiotics, adhesive tapes, perfumes, scents, smoke, avocado, banana, Any oils of any of the items, DEATHLY allergic to sunflower oil. (I know I’m forgetting items) but its quite an extensive list.

It sounds like you should go get allergy testing done, I will warn you its not pleasant. But so important to find out what items you are in fact allergic too. If 1 allergist refuses go on to the next.(some are better then others)
Sense I don’t have the diabetic problem as you do,(all though I have several others) I’m not sure how that comes into play with allergy testing. I can tell you what they do is use your back or arms. They will label 1-50 or however many are being tested. They will then place a drop of that substance (in a serum form) and with a needle prick you to break the skin and allow your body to react. (However big the Hive is however bad the allergy)
I’ve had it done twice and will be having it done again this next month. Allergies change overtime so its good to get retested every so many years.

I am having a problem currently where I’m having allergic reactions “food allergy style”: Itchy mouth, throat swelling shut, Itchiness, breathing problems, all leading up to an anaphylaxis reaction if not treated, and no clue whats causing it, Like I have become more sensitive. I have noticed if my body is already stressed from other reasons I am more prone to reactions.

I took an injectable medication called “Xolair” for a couple years, It had to be administered at a doctors office and it is used to treat severe allergies and allergic asthma. Insurances hate it, its quite expensive. My doctor had to get a special authorization plus show them my allergy testing results to prove how much I needed it.

It’s not for everyone and is nowhere perfect, it has its risks. I’m also not a doctor and cant tell you whats right for you. So discuss it with your doctor. Only certain doctors do it and you can find one in your area on this website. If one doctor blows you off or doesn’t take you seriously don’t waste your time move on to the next! It’s hard to find good doctors. I myself finally ended up at the Mayo Clinic.

My milk allergy luckily doesn’t cause a severe reaction, it mainly affects my intestines and stomach. Ive never had a dangerous response to it.
The allergy testing is good cause it also shows not just what your allergic too, but just how allergic to it you are.
As far as dealing with the milk and gluten allergy, it’s a tough process. I also am supposed to avoid foods with acid. I realized long ago it would be impossible to be on all 3 restrictive diets. The gluten/wheat allergy I MUST follow. So I a lot of the time will eat the acids and deal with the repercussions and pain it causes. The acid over time will start hurting my kindeys and I’ll have to switch off of the acid as well.

Milk is probably the hardest one for me. Cause its in Everything!
The heathfood store “WHOLE FOODS,” should be your best friend.  All though costly they have pre-made meals, desserts and it will list which are gluten free, nut free, dairy free, and some are all of the above. Local stores are also starting to carry a lot of these items.
I also went out and bought the special designed cook books for the conditions. So I have ideas for meals to make on my own.

The Celiac website: www.celiac.com is very informative and will not only have support with other people sharing your problem. But like Reddit provides very informative info including others experiences all the way down to recipes and places like restaurants and stores that are gluten/wheat friendly.

There are dairy free/wheat free pizzas out there but I will say there not good LOL. But A lot of major pizza chains are starting to offer wheat free/gluten free crusts and I will partake in that on occasion. I will still get issues most the time though cause its made in the same place the wheat is.
It’s a long journey and a lot of learning along the way. I'm happy to try to answer any additional questions you have or be there if you ever want someone who understands.

What does your Diabetes restrict food wise? Are you avoiding sugars?
Vanilla Rice Milk is a very good milk alternative I have found, and I even started liking it more than milk. I’ve had to stop it cause they are starting to use sunflower oil in it :/
I found Potato milk is alright as well. I don’t care for Soy milk. I don’t like the taste and it doesn’t do as well in cooking as the others do.

ALWAYS READ INGREDIENTS! So Important! Never trust a waiter, or a friend, assume everything you eat will cause an issue.

Obviously, the former is much funnier and more honest about the BS realities of having celiac. But the latter is a super legit deep dive, and Dr. Fasano is considered one of the leading doctors in celiac research. Both were incredibly informative and useful for different reasons. I also had my family read both of these, which has been really helpful to expand their knowledge and support me through this new transition. Plus both books have great GF recipes!

For gluten-free baking, I have done a fair amount as part of my low-carb stuff. Almond flour baked goods are the best, and have a lower glycemic index. Just make sure you DON'T use the Bob's Red Mill brand - something in the way it's milled gives it a grittier texture. Honeyville or the almond meal from Trader Joe's are my favorites.

This cookbook/gluten-free blogger does really tasty things and tries to limit overall ingredients used between different recipes/keep the number of ingredients in any single recipe to a minimum. It makes it much easier to bake things when you don't have to go to 3 stores to get all of the ingredients, and have standard things you can stock your kitchen with! Okay, something I can actually chime in on. I had to cook gluten free casein free for a while (long story) and the cookbook that SAVED MY SANITY was Cooking for Isaiah. Specifically, her flour substitute is AMAZING and the best gluten free substitute I have found. The stuff in the book tastes like REAL ACTUAL GOOD FOOD.

Also, my favorite GF/DF cookbook is Cooking for Isaiah. The brownie recipe and chocolate chip cookie recipes are really good. I take them to the kids' school for parties and they are fully eaten and no one notices that they are GF/DF.
All of her recipes are good. I think she was the editor for Rachael Ray or something like that.

I highly recommend reading The Migraine Miracle or checking out the My Migraine Miracle website. Dr. Turknett talks about keto diets, but it's more than just that. If you aren't dealing with other issues (rebound headaches, medication overuse, etc), it won't help. I just read the book and am part of a group on Facebook, and there's been many people who've had success with this.

Not a migraineur but my wife is. She suffers from chronic migraine and has some level of headache pain 24/7, with it developing into attacks ~3 times a week. This has been like this for years - it's been rough, as I'm sure I don't have to tell you.

It sounds like you are already well down the path of using the best techniques that the medical world has come up with to tackle migraines. Good luck with this! I've pretty much given up on looking online for medical advice (which I realize is not what you were asking for) - it seems for every form of medication available there are a thousand stories of it working miracles, and a thousand stories of it doing nothing at all. If you find something that works, awesome. My wife tried topimax and botox, and we think they were marginally helpful, but the difference was small enough it was hard to say. As a result she still continued to pop her triptans like candy. This past new years / christmas holiday was particularly bad, and it really made us go back to the drawing board and reexamine our migraine approach, as it was clear that life this way is just not sustainable. I'm sure you know the feeling. We were considering aimovig and that class of new drugs, but in our research stumbled upon this book The Migraine Miracle by Josh Turknett. The author is a neurologist who allegedly suffers with migraines himself, and he lays out the case that migraines have their root causes in our diet, and argues that longterm use of abortive medications like triptans cause rebound headaches. Believe me, I know that the idea that just eating differently and going off meds sounds too good to be true (and I really do dislike the book's title - such a lofty promise to print on the front cover), and honestly I'm not sure his method works quite as well as he claims, but I still HIGHLY recommend reading this book and following it up with his blog posts. I also highly recommend making your loved ones read the book - I learned more about the science of migraines and what it's like to suffer from them than I have from any other one source.

For the past 3 months my wife has been on the diet and has gone off all medication, including triptans and NSAIDs. She's improving, slowly but surely - her attacks are less violent and shorter, and slightly less frequent. She still suffers from more or less constant head pain on some level, which we (& Turknett) believe is the rebound headaches, and we expect to see that disappear after six months of being medication-free.

I'm not saying this book will cure you - for us, the jury is still out on whether it's actually the 'miracle' it promises, but there's not doubt we've seen some improvement by following its recommendations. Clearly there are people who respond very well to botox, topimax, the occasional triptan use, and other medicines. We are envious! This book has been absolute paradigm shift for us, and has sent us down a treatment path that so far has been at least as effective as the medication we've been on, and promises to deliver much more. It's not a quick fix and it's definitely not easy, but if you're not making progress with the expensive medications then I HIGHLY recommend reading the book and seeing what you think of it.

The book, The Two Step Low Fodmap Eating Plan, has suggestions for reintroducing each group, one per week. They suggest you start with mannitols and eat 1/2 cup mushrooms or 1/3 cauliflower.

Thirding a low FODMAP here. My partner had a very quick improvement in quality of life when we took on a low FODMAP diet.

If you're not worried about nut allergies too much, this cookbook is great. I used to make the rosemary shortbread cookies and they sold like crazy!
