My version uses pre-made coconut bacon (I LOVE this stuff). I doubled the amount in the recipe and left out the mustard sauce and olive oil (just used spray). This is my new favorite way to eat Brussels sprouts!

Not to be Debbie Downer, but it's more than 2 carbs. I don't know if it was from the same site, but I remember someone else saying something similar about the same type of recipe. 1 cup of unsweetened coconut flakes is more like 8-10 net carbs. Source 1, Source 2, Source 3, This one is an outlier and probably inaccurate, but it still says over 5 net carbs per cup.


1 cup of parmesan cheese is also going to have some carbs. Sometimes nutrition info says zero per serving if it's less than .5, but there's some in there and it'll add up to a couple/few carbs when you're talking about a cup (16 Tbsp) of it.


All that said it's still delicious. I have usually made it with some almond flour added in as well.

For anyone out there (like myself) who cannot get past the taste of pork rinds no matter how you prepare them, these are PHENOMENAL with unsweetened coconut! I prefer this brand because they're the only brand I've found with such finely-shredded texture. It really tastes absolutely delicious.

Almonds and unsweetened coconut flakes. I just ordered this: http://www.amazon.com/gp/product/B000F4D5IU/ref=oh_details_o03_s00_i00?ie=UTF8&psc=1 and it will last me a while. I take a little 4oz container (about the size of an apple sauce container) and put a scoop of almonds, and two scoops of coconut in. I eat a few if I get hungry between meals and it's fine to keep out of the fridge.

I'm in the same boat. I just moved to Hawaii and I swear, no one diets here at all. And they eat rice with everything. I'm afraid to say the word "low carb" around these people :)

So I have recently bought on amazon a bunch of things I USED to be able to find my local grocery stores, such as:

  1. Bob's Red Mill Coconut Flour
  2. Bob's Red Mill Almond Meal/Flour
  3. Mama Lupe's Low Carb Tortillas

    I bought them in bulk and they're all going into the freezer.

    I will probably try this Unsweetened Shredded Coconut soon because the I Breathe I'm Hungry blogger is always using it and I can't find it unsweetened here...

    And I've always bought EZSweets on Amazon, I've never found it in stores anywhere.

    I'm having issues finding Pork Rinds in Hawaii by the way, so if you find a good spot to order them online, let me know.

My Whole Foods carries it for $5.99 for the 1lb can. It's a completely different beast than almond flour. A little goes a long way. For instance only 2Tbs of it is required for the pancakes I make. I've also just now bought my second can, the first lasted me since October.

And here I thought I had looked. Apparently I have not!

THIS is the stuff I find locally, but with over 200% markup.

That still isn't cheap, for flour, but it's not bad relatively. Any Paleo recipes I need to try with it? I have one that someone posted of a chocolate cake with a chocolate frosting. I just don't want to buy 6lbs of flour and not use it.

Malts

  • 9.25 lbs German Pils

  • .5 lb vienna

    Hops

  • .5 oz Perle for 60 mins (8%AA)

  • .5 oz Tettnag for 60 mins (3.9%AA)

  • 1 oz Hallertauer for 30 mins (2.2%AA)

    Yeast
    *WLP029. I started fermentation @ 62 for 24 hours then ramped down to 58, total of 12 days. Then lagered for 24 days @ 36 degrees.

    1.050 OG, 1.010 FG, 5.2% ABV

    For the coconut, I bought this. Used one package, spread it out flat as possible on a sheet of foil on a cookie sheet, and toast it @ 400 degrees until it starts to brown. I then added it in a hop bag with some sanitized marbles to the keg. This is enough coconut to make it WAY too coconut-y, so be sure to taste daily :) Should only take a day or 3

Can I just use fresh coconut (like straight from the fruit) or does it need to be unsweetened coconut flakes (like this)? I ask because I've noticed there is a difference, especially when trying to make coconut butter (it can't be fresh).

Do you like coconut? I recently bought a 4 pack of shredded UNSWEETENED coconut from amazon!~ It is amazing. There is totally no need for sweetened coconut, and all the stores around here were strictly sweetened.. UGH! You can eat it in a lot of things! I eat it mixed with natural peanut butter for a treat//fat bomb on keto. SO GOOD!

I know some do not like coconut, soo I will also suggest chia seeds. They are filling and FULL of fiber! You can add them to smoothies, drinks, liquids and they swell up and make a gooey consistency like tapioca.. Though some don't like that you can grind them up and they feel more pudding-like. (With a coffee grinder, or mortar/pestle.) I use them for chocolate pudding. Unsweetened cocoa, sugar substitute and unsweetened almond milk with some sugar substitute. It's great for a treat after a night of the seeds swelling up.

I have tried cutting spinach and just using Kale...I heard this could be part of the problem because it creates histamine. Not as itchy, but I also haven't taken my antibiotic in a few days...though I'm curious why that would just start causing a reaction.

Well if nuts are your fix, you should try buying whole, unsalted, unflavored, raw almonds, and throw them in a blender or food processor and make some homemade (1 ingredient) almond butter.

I haven't been able to find erythritol anywhere except Amazon, and I've checked Whole Foods, Trader Joe's, Fresh Market, a local natural foods store and Walmart.

I'm really just checking in about that recipe. I tried making it, and used this coconut and I had some serious issues. It never got liquidy the way the recipe says it should and so I added a little heavy cream, and it ended up being a big coconut-ish flavored blob of butter. I couldn't even stomach them.

I reeeeally hope it works out better for you! I probably did something wrong, but all the recipe said was 'Transfer into a blender and pulse until smooth.' Mine just stayed dusty and dry after about ten minutes on high in the food processor. :/
