Recipe

  1. Make vegan nacho sauce from potatoes and carrots, set aside in fridge to chill.
  2. Pan-fry beefless crumbles according to the package with 1/2 white onion, diced.
  3. Microwave a large flour tortilla for 10 seconds.
  4. Place 1/2 cup of the beefless crumbles in center of tortilla.
  5. Add thin layer of nacho sauce.
  6. Place crispy corn tostada on center of all of this.
  7. Add dollop of sour cream and spread evenly.
  8. Add a layer of chopped iceberg lettuce.
  9. Add diced tomatoes.
  10. Top with Daiya pepperjack shreds.
  11. Unless you find super huge tortillas, you will want to make a piece of tortilla the size of the tostada and place that on top of all your goodness.
  12. Fold up the edges moving counterclockwise, it is absolutely impossible to fold the edges the other way around the circle.
  13. Heat up a skillet to medium/hot and crisp this thing up. Start with the "hole" side down for 3-5 minutes and then flip and do the other side. It smells when its ready if you are paying attention.

Happy Friday, ladies! I'm in danger of complaining about yesterday for three paragraphs, so I'll just say that MS sucks when it's hot. It was 95F yesterday, and my pre-dawn run had me so overheated that my entire day was defined by an inability to find the words I needed, sobbing in my office over a photo of brisket, and the most severe limp I've had yet. I was limping so hard that my legs are sore from it this morning, and that's just unacceptable, because my new running shoes were waiting at my door. They'll see their debut tomorrow, when I can spend the rest of my day sleeping in front of the A/C. I feel pathetic just writing that.

Also waiting at my door was biltong, which is the answer to all of my snacking problems. I love jerky, but I don't love eating grain fed meat with extra sugar. I can't wait to try the other flavors!

I'm quite proud that I've been keeping up with doing core exercises again, even if it's just a 60 second plank, but it's crazy how sore I've been. Evidently, I have no core strength unless I chase it down, but at least I'm moving in the right direction! I'll do a 20 minute routine before work this morning, and perhaps I won't be a melting blob of weakness at my desk again.

19 months until I can leave Texas for a tolerable climate, and leave the cohabitant for some desperately needed solitude. That man WOULD NOT SHUT UP last night. I kept asking him to please stop talking, but he managed to share every damn thought that entered his mind for 5 hours. I don't understand how someone can blatantly ignore what the other person in the room so obviously needs, under the guise of wanting to interact with that person. His untimely demise wouldn't be untimely at all.

Keep your eyes on the horizon, ladies. If you're feeling frustrated or impatient, remember that your goal is probably less than 19 months away! ;) Do something nice for yourself in the mean time, and always KCKO <3

It’s a mock meat usually made of soy and intended to replace ground hamburger. Most people can’t tell the difference when it’s prepared well. A good brand to see what it’s like is Gardein.

Try biltong. It's South Africa's version of jerky and it's never sweet. Lots of spices instead.

I've been getting pretty serious into pizza making over the last few years.

My Dough Recipe:

  • 1 1/2 Tablespoons Honey
  • 1 Teaspoon Salt
  • 3 Cups Flour
  • 1 Cup Water (100 ~ 110 degrees)
  • 1 Tablespoon Olive Oil
  • 2 1/4 teaspoons dry active yeast

    My Sauce Recipe:

  • Carmelina Canned Tomatoes (milled / seeds removed)
  • Carrots (cuts the acidity)
  • Onions
  • Celery
  • Garlic
  • Oregano
  • Red Pepper Flakes

    (Mince the onion, celery, garlic, carrots. Toss in a pot with a bit of olive oil over a low heat. don't brown them, just get them translucent. Pour in the milled tomato puree. Simmer over a low heat for a few hours until reduced to a sauce like consistency (about 3 - 5 hours). Add in Oregano and red pepper flakes. Salt to taste. Taste while you're making it. If it's too sour, add a bit of sugar or some shredded carrot.

    Here are my tips:

  • invest in a pizza/ baking stone. It'll make a world of difference for your crust.

  • invest in a pizza screen, it'll add that signature texture on the bottom and help as a barrier between the stone and dough.

  • less is more for toppings

  • do not use those pre-sliced pepperoni from the supermarket. Get a high quality log from like Bridgford: http://www.amazon.com/Bridgford-Pepperoni-World-16-Ounce-Sticks/dp/B0029JW96I

  • Never ever use imitation cheese or pre-shredded cheese. Pre-shredded cheese is coated in a fine powder to prevent mold developing quickly on the small surface area. This powder sadly also prevents even melting times and prevents browning which develops flavor.

  • Place the pizza stone on the upper middle rack. 2nd from the top. This gives the best even cooking.

  • Preheat the oven at the highest temp it'll go. Once preheat is reached let it continue to warm for 1 hour. This will ensure your stone is the hottest it can get in your oven.

  • If you make dough, let it sit in the fridge for 24 hours to ferment more for chewier crust.

  • Never use cold dough. Let it come to room temp.

  • If you're having trouble tossing the dough, a good cheater method is to pour a tiny bit of olive oil on some baking paper, spread it around, drop the dough on it, drizzle oil on top and spread it out with your hands, turning it after each stretch. Then once u got a nice circle, transfer it to the pizza screen.

  • Get a pizza peel.

  • Brush a melted butter and Italian seasoning mixture on the top of the crust before adding the sauce. This will allow your crust's edges to brown better and give it a nice flavor.

  • Uncooked sauce will give you a fresher tomato taste. Cooked sauce will give you a deeper, more robust flavor.

  • Cut pizza from the center -> out if you have a small cutter.

  • Add basil after cooking and after you've cut the pizza.

  • Add a tiny bit of red pepper flakes to your sauce. Trust me.

  • If using a screen + stone. Place the screen on the stone. Let it cook enough for the bottom to be cooked enough to be handled the transfer it from the screen to the stone directly for getting that crust more firm.

  • A three cheese blend does wonders for the flavor. 80% Mozzerella 10% Prov 10% Parm is a good mixture. Experiment with your favorite cheeses.

  • Try to make your sauce from scratch. Tomato sauces are very easy to make. Pizza sauce consists of tomato sauce + oregano + red chili flakes.

  • 00 Flour / King Arthur Flour gives a bit of a better dough.

  • Above all, experiment and have fun.

BOOM I had the bacon jerky before and didn't even think about it! World Market carries it. As for the no seeds/nuts, my research in to getting Keto started says no nuts or seeds until 2 weeks.

Hmmm...I would say maybe my miracle berry tablets (make your taste buds go all wonky), my game jerky (whatcha think of kangaroo, alligator, and wild boar jerky?), cricket bars (nuff said...), a horse head would be on the weird/creepy side.

Favorite stuff would be hard to say. Language stuff, ebooks, any of the CAH (unofficial) expansions (Crabs adjust humidity, etc.), Star Wars clothes n stuff, movies... I don't really have favorite items, because I love many different things.

I'll enter for my Newt Dawg. He arrived back in October and we knew he was a boy all along.

I have a strange recommendation for new parents, but trust me on this one: beef jerky. With a newborn, it is very hard to get a good meal in. Jerky has lots of protein and is easy to eat in a hurry. You don't have to heat it or do much of anything to it. Good jerky was a staple of my diet the first six months after he was born.

Look for traditional hard smoked jerky, not the new "wet" jerky and you'll find few carbs (generally 1 or less per serving, 6 or less per *pound*)

(Wild Bills, Buffalo Bills, most home made jerky, etc)

Most traditional jerky's also keep better than wet jerky when it's really sweltering out... and are usually vacuum packed by default. They can also substitute for meat in a soup pretty easily if you soak em a bit... add some of dried veggies, lentils, and it's not bad. Nice change.

I love sushi. I would eat it every day. Possibly. Well, probably not. Once a week? More than I am eating it now. I recently read a little sushi recipe book at a friends and it made me never want to try to make sushi at home again. There are so many things you need to have and do! Like a rice paddle. I've found a brand of no-sugar beef jerky called Keto Carne on Amazon. I'm quite lazy so I eat that a lot.

Nuts might be my main snack, or a stick of some kind of salami/chorizo/etc.

My wife has a veggie tray for parties and what not, I fill that thing up at the beginning of every week and just graze on it. So much easier when your olives or peppers or broccoli or carrots (in moderation) are already cut up for you.

Buying pepperoni can be tricky. Normally we'll just grab whatever pack is at the grocery market. Luckily for me I have an Italian market near me and they make their own pepperoni.
