I use something like this, which stopped the issue of it not catching the very bottom of the bowl.

I recently researched which grease to use, when I learned that you should change out the grease every decade or so. Here are a few different ones that will work.

Here's a video about the dime test:

> But when you're only making a small batch, the 6qt is just too big. The contents just get thinly spread around the surface of the bowl and you need to constantly stop and scrape down.

Get the 3 quart bowl with the combi whip. It fits the 6qt bowl lifts. I got mine on sale for $40.

> Something's up with my burnished attachments and the white frostings have started to turn grey lately, which is discouraging.

That's aluminum oxide and it happens if the coating wears off the burnished aluminum beaters. You can use bar keeper's friend to get it off, but you will have to wash it with bar keeper's friend each time you use it. You can simply buy the white coated beater off of Amazon for $15.

You also can buy a knock off flex edge beater for about $20 on amazon.

> I almost want to trade in the 6qt for an Artisan Mini.

Sell it on ebay.

> I also own the shredding attachment and while being able to shred cheese in it sounds like a useful feature, it's finicky, messy, and annoying to clean up afterward.

Agreed, it's a bad design especially since the main part can't go in the dishwasher. I use my food processor for shredding cheese.

Great find! Mine was in similar shape when I got it, it’s easy to get it cleaned up, just time consuming. You’re going to want to replace the grease, you can find kits on eBay. I used the non-petroleum grease and it’s been working fantastic. You can often find good cheap accessories on the Facebook marketplace if you’re on Facebook. I found a lady near me selling two bowls and all the accessories for 40 bucks. Make sure whenever you decide to dig into restoring this, you have a bunch of time on your hands. Changing the grease took me a little over two hours. I’m a bit of a perfectionist though 😅 you can also look on YouTube and find fantastic tutorials on how to repaint them. That’s my next project. I just have to pick a color! here’s the link to the grease I used

the creamer is so good; their hazelnut flavor is awesome too and i use it when i make myself a mocha 🌝 i personally adore my magic bullet. my boyfriend got it for me as a gift and i’ve used it almost daily for something like 2 years now. i know the first person who replied to you said it’s bad at crushing ice but i got a third-party attachment from amazon specifically for blending ice and it works great as long as you just add a couple ice cubes at a time.

this is the attachment: https://www.amazon.com/dp/B01NCV8D4H?ref=ppx_pop_mob_ap_share

I just use that attachment for dicing really. You get better results putting the cheeses in the freezer for like 15 mins though..

This attachment works way better..

You are welcome. I did have another thought. The US is 120v, while you have 230v current. You might want to find a high voltage solution.

Kitchen Aid 220v stand mixers--which will not work in the US--are available and should work on your current. Kitchen Aid makes a food processor/dicer attachment that works on the stand mixer. I don't know how good it is, but it might be an economical solution since the mixer and the attachment would be less than $700.

Here is the 220v mixer:

Since you have a kitchenaid, This one.

That's just the roller, but it's only 60 bucks.

Now if you add the cutters, they cost a lot more.

This one makes spaghetti and fettuccine, but it's about 130 bucks

But if you have to get the cutters, might as well buy the set. for 180 bucks.

You can hand cut the noodles btw. It's not that difficult, but getting it consistent is the difficult part.

But to be honest, it's that inconsistent noodle thickness that adds to the charm of homemade pasta, if you ask me.

As long as they're consistent enough to cook even enough, it's fine I say.

There's also this set

But really I wouldn't pay for a cutter that cuts ravioli for me.

u/bloodorange_crush · 1 pointr/sausagetalk

First, no it isn't suitable.
Secondly, there are stainless versions for the mixer that are much better. I got this accessory for Christmas and I love it. The cutting blades are not very sharp out of the box but some lapping by hand totally did the trick.

This happened to my old kitchenaid, it's normal and you can fix it at home. You need to buy replacement grease.

These are the instructions I followed.

I own a "Kitchenaid Professional 6" with many attachments. Probaby 20 years old. I bought mine refurbished from Kitchenaid. I couldn't tell it from new. I think I paid $350 back then. Don't confuse this with the "Pro 600", they are budget priced unit for Costco and the like.

Zero problems except the black knob for adjust the speed cracked and fell off. I bought a knob at the hardware store for a few dollars and like it better anyhow.

My advice is buy the biggest hogger you can afford with the PTO, the largest bowl (double and triple recipes) and largest motor (think torque and meat grinder/ice cream attachment).

("My riding mower has too much horsepower, cuts grass way too fast and has too many attachments" said nobody, ever!!)

The advantage of the "lift design" is that you get tighter contact to the bowl and you can "Plunge" into and rise out of your product with the motor running. The lift design with throw your contents everywhere and make a huge mess.

Why would you plunge into your product? Ice cream maker option, solids like hamburger and diced veggies. If you want to make perfect whipped cream the plunge is everything. (Think of an ice auger or a post hole digger in action... You raise the auger and the spoils come to the top outer. You can't do this with a tilt model)

Another user said: "easier to switch the attachments, scrape the sides of the bowl-lift and add ingredients" and they are not wrong. It a decision you will have to weigh the advantages and disadvantage yourself. The scrapping part is a pain with the lift. I ended up buying the Kitchenaid scrapper that was made for the machine, spendy but worth it!

Forget about colors, they are a trend. I bought the red one thinking it would stand out more as a focal point, but it is so large that it stands out in any color! LOL! A good quality mixer is an investment that can last generations. You may not envision yourself grinding meat or making ice cream in 5 years, but how about in 25 years?

This fits your budget. Here is the link:

If you are on the fence because the lift might be harder to scrape the sides... There is this!

tempering machines are expensive. i did just find out about kitchenaids precise temp mixing bowl though, but havent bought one. but based on the price and the temps you can set it to, may be very well worth it. i havent been able to find out how much volume it holds though, which is one potential downside if its smaller than the standard kitchenaid size mixing bowl. https://www.amazon.com/KitchenAid-KSM1CBT-Precise-Mixing-Mixers/dp/B00U0VTDRU

> Which european paddle do you mean?

I mean the wide part on the inside of the dough hook. The [European dough hook] is a little different from the American one. Note the sandwiched head (compared to the rather poor press fit look of the US hook) but most importantly the "paddle" is almost a uniform width all the way down, as opposed to the highly tapered US version.

Also what is known in the us as the "small batch attachment" is a standard part of the European models, rather than an optional accessory and is considered a "dough divider". It does actually help a little with dough creep even with the US hook. Mine, despite being an OEM part did not fit snuggly on as it is supposed to. I also had to grind down the paddle as is longer than on the Euro hook. In short I don't recommend doing the dough divider accessory for dough creep unless you can get the Euro hook or plan to "make" one.

I actually wound up buying a Bosch Compact mixer for my small batch baking needs due to the frustration with the dough creep, I'd recommend it for anyone who doesn't need to mix breads with more than 750g of flour over the Universal Plus.

I wound up springing for the old style bowl when entering a competition so I could make bigger batches and/or not burn my compact by making a million batches of tough Challah dough. It requires it's own DIY additions, though I would suggest not gluing anything to the mixer, it's not very effective and doesn't work well with the normal bowl. A circle of the right thickness sitting on the protruding ring is a much better option, I just cut an octagon out of foam core an it reduces (but doesn't quite eliminate) the play. It works okay depending on the dough but tends to generate a lot of friction heat (even beyond the standard bowl) and is a pain to empty and clean, however IMO it was the best option available stateside at the time.

The new contender is the dough hook extender. I haven't done this one yet, but have high hopes for it as it should add enough surface to keep the dough down for a whole rotation.

TL;DR Bosch and L'equip (their US distributor) fucked up the dough hook in the US, likely due to idiots cutting corners (quite literally on the paddle) and instead give you what look like plastic pull tabs to keep the dough out of the shaft. I spent too much time and money trying to fix it and am still not quite there.

EDIT: one upshot with the old style bowl is that it works well with my 100% rye sourdough.

If you do a lot with citrus or love making fresh lemonade, I definitely recommend the citrus attachment. If you have to do more than one or two lemons at a time, this can save your arm.

So the Kitchen aid used to have extruder that came with meat grinder. I think they discontinued it. It didn't work very well anyways.

The pasta rollers for Kitchen Aid work really well. (http://www.amazon.com/KitchenAid-KPEX-Pasta-Excellence-Attachment/dp/B0007QN05Y/ref=sr_1_4?ie=UTF8&qid=1373640212&sr=8-4&keywords=kitchen+aid+pasta)

Now I believe they replaced the meat grinder/pasta maker extruder with this one (http://www.amazon.com/KitchenAid-KPEXTA-Stand-Mixer-Pasta-Extruder-Attachment/dp/B003GWZ9ZK/ref=sr_1_3?ie=UTF8&qid=1373640212&sr=8-3&keywords=kitchen+aid+pasta) I don't know how well it works, has to be better than old one.
