First, know you're not alone. Lots of 500lb folks here took that first step and ultimately reached their goals.

As some other folks will say, don't set yourself up to fail by being too restrictive up front. Go to myfitnesspal.com and start entering your info. YES, I hated doing this originally, but just. do. it. It makes all the difference in the world to set up your goals, record your meals (be honest and get a small food scale to weigh portions) and ultimately watch that weight graph start going downward.

It gets kind of addicting actually.

Also. Cook. If you can, get some spices (turmeric, cumin, poultry seasoning, five spice, garam masala and curry). Spices are your friend and many have health benefits. Start looking into what's in your food. Don't go with packaged stuff but start to play mad scientist in the kitchen. If you're starting with healthy ingredients, chances are you're going to be ok.

Cauliflower rice and zucchini spaghetti (food processor and a julienne peeler) are great substitutes for starchy originals. Also, consider almond milk vs. dairy.

Start walking. Focus on small gains, establishing good habits, eliminating empty junk calories from your diet and just focusing on health. You'll be the perfect poster boy for your company - maybe they'll help you with some of the skin removal down the road.

That's it. Just think long term. Not quick fix. You want to reengineer your life bit by bit to have a sustainable, healthy diet and activity schedule. You're young, it's a perfect time to do it.

Kind of depends on your family's eating habits We're the type of family to shove oranges and random fruit into stockings (might be because we're usually broke in the winter hahaha) and there are never enough of these things to go around! We kind of have a competition on who peels the coolest decoration into their oranges...

In culinary school they referred to y-peelers (like http://www.simplygoodstuff.com/star_peeler.html) as speed peelers. I have one that my wife bought me a couple years ago, ceramic blade, she dropped like $70 on it. It always walks off (cuz it's cool looking).

So I buy the crap ones (lately it's been the ones in the link above, before that it was these - they fall apart after a couple of weeks, but I literally buy them 10 at a time, can keep them in your roll, always good to be 'that guy' with the extra stuff for just in case.

A french fry cutter is great for dicing everything, especially onions and bell peppers. If you feed it sliced potatoes the end result is diced instead of fries. Some of the commercial dicer go over $100, but for most home use there are less expensive options. I've found the most important thing about using these is to rinse and clean them right away before stuff dries up and gets crusty.

To go low-tech... a citrus peeler and this can opener.

I have never peeled an orange so easily as I do with the citrus peeler. I gave one to a friend for Christmas because he ate at least one orange a day, and after the first time using it, he said "This is so easy, it feels like cheating..." It takes a few tries to really get the hang of it, to peel easily (the pokey side scores through the peel, then then long thin side is used to slide between the peel and the fruit and pull it off), but it is SO worth it. Gave one to each family member for Christmas too, because my mother had the only one in the family. My sister saw the package, said "Nothing this small is ever very good!" (not in a mean way, of course), then she opened it and about screamed in delight. DEFINITELY a must-have.

The can opener cuts through the soldering on the side of cans instead of down through the top. Lids pop off easily and there is never a sharp edge on top. You can even kind of pop the lid back on if you need to continue to store the food. The can opener even has a little 'beak' you can use to lift the lid up if it's trying to stay put.

Unfortunately, not everyone has the dexterity to strip corn with a knife.

I researched it a bit and Cook's Illustrated recommends this model from OXO. They said it wasn't more effective than a knife but it was safer and made for an easier clean up.

I'm going to go with /u/cheeseburger_humper and say that I think everyone needs a lovely birthday cake scented candle. Because you know, nothing cheers people up more than the smell of birthday cake. Ok, not true but it's in the top 10.

I don't need double talk, I need a veggie peeler since I've been using a sharp knife and tend to nick myself from time to time. And blood on the peeled veggies isn't really up to code, you know. :(

ASides that. Go to a local resturant supply house and you should find all the proper NSF approved goodies you could ever want.

My favorite replacements for carbs are: cauliflower rice--excellent under a curry or any sort of saucy dish; mashed cauliflower fauxtatoes--goes with any number of meals; julienned zucchini noodles--made with some sort of instrument like this; also, you'll learn to appreciate some other veggies you might not have loved before--bacon brussels sprouts for the win!

Also, while I wouldn't say these coconut chips are particularly "healthy", they are a better alternative to potato chips and really yummy. The hardest part is not eating all of them though :) Oh, also not burning them. For the love of all that is right and holy, do not burn these suckers...

Something weird is going on - when I posted the images I also posted a comment with links to Linda's site (where I got the recipe) and Amazon for the peeler, but the comment isn't showing up on my phone so I'm guessing no one else can see it.

But I followed Linda's advice and didn't julienne the center part with the seeds :) And you could probably get a similar peeler at any kitchen goods store.
