Get some toaster bags, they're non conductive, they catch the grease, and they're designed to be used in a toaster.
Yo, check out these recipes and stuff, it's the info i gathered for someone who wanted to go vegan but can't use an oven or stove. Definitely accessible cooking for a dorm room.

Short list of microwave recipes
Yummly microwave vegan recipe database. Can sort by the amount of time you want to spend cooking, low end is 15 min.
Raw blender soup recipes.. The raw part is unimportant but searching for "raw" recipes will help you avoid anything needing stove or oven time. You can always heat soups in the microwave, but anything called "gazpacho" should be eaten cold.
Sandwich recipes from PETA.. Some require stove or oven, but the pictures with each link will help you choose ones that can be made without stove/oven.
100 sandwich recipes, some have pictures.. Things that are "grilled" or called "melts" might be possible with just toasting the bread and heating the ingredients. Anything called "baked", "roasted", or "sauteed" would probably need a stovetop.
Toaster bags for a "grilled" sandwich without the stove
Silicone food steamer for microwave I have one of these and they work well if you don't overload them.

I don’t know how good these things work, but I knew they existed...

It sounds like you're an awesome host. The bread is a great idea, and very thoughtful.
As for cross contamination if you don't want to worry about keeping a whole separate jar of peanut butter safe there are Justin's squeeze packs in regular peanut butter and various other nuts and flavors. I think stores like Whole Foods sell them individually too.
Also a lot of gluten free bread is much better toasted so it might be worth getting some toaster bags for your cousin to use. I've never used them before but my nutritionist recommended them.
I guess this advice pretty much hinges on how much your guest likes peanut butter, but PB sandwiches (or sadwiches, as I call them) are pretty much my go to food when I have to carry food around with me and I've had enough Kind bars.
They make bags for grilled cheese in the toaster that work amazingly well.

Well you can pretty much make anything from any cookbook just be sure to double, triple and quadruple check the ingredients your using. Most jib oils, pan sprays contain soybean oil which is a big red flag for those with soy allergies.
They make toastabags which allow you to send gluten free breads through a traditional toaster.

Some old folks need their food cut up real small and have hands that are too shaky to do themselves, wait staff can do that or depending on whether you use a rational/sham type pre-plated setting can do that ahead of time for em or do it at service time.
Yep! These are the ones I have. We also use them to crisp up leftovers sometimes...like fries from the kids meals that they don’t finish, lol

Actually, I've toasted an egg once. Crack it into a toastie bag and put it in the toaster. It's surprisingly good, but doesn't beat fried.

There are lots of racks for 1/4 sheet pans, but I have not found one for an 1/8 pan. There are racks for steam table pans. A rack for a 1/4 size steam table pan is a little bit smaller at 4.25 by 8.25 inches, but it might work for you. Here is an example:

Toaster oven pans are close to the size of 1/8 pans, but racks for them will not fit. You could just get a toaster oven pan with a rack.
A stainless steel toaster oven pan with a stainless steel rack might be a good solution for dry brining:

Hey, there are worse things you can put in there.
Speaking of sticking cheesy things into other things, anyone heard from Ratty lately?
Not a bot - but...if your concerns are safety:

You may want to check this out then. Toastabags are awesome. They're meant for grilled cheese but they're washable so you can indeed do jelly sandwiches in the toaster.
I'm much more amazed by the Toasterbags. Never knew such a thing existed!
Problem solved.
Glad you're feeling better! As for your toast issue, they make toaster safe bags you can put your bread in to protect it from the toaster gluten. Lots of people travel with these! Here's an example on Amazon, though there are lots of options out there: https://www.amazon.com/ekSel-Stick-Reusable-Toaster-Bags/dp/B00LOXN6JO

You just need some of these babies. Problem solved!
I was lucky and got this model NIB off craigslist for $40 so I can now toast various flat breads (some I trim or halve first), large bakery fresh rolls, bagels, challah, and those large artisan bread slices.
I know there are reusable "toaster bags" for gooey stuff like frozen fried foods, pizza or grilled cheese. http://www.amazon.com//dp/B00LOXN6JO - or fold in - http://www.amazon.com/dp/B00LOQNEK2
got any other ideas I'm missing out on?
Instead of buying a separate toaster I use toaster bags. https://www.amazon.com/ekSel-Stick-Reusable-Toaster-Bags/dp/B00LOXN6JO/ref=sr_1_1_sspa?ie=UTF8&qid=1525200106&sr=8-1-spons&keywords=toaster+bags&psc=1
The toaster is probably your biggest concern. If you haven't got a dedicated toaster, get yourself some reusable sandwich bags and use them every single time you toast your GF bread.
Or these

These are the ones I use. Been using them for a year. They work like a charm - seriously.
Behold the future
Though those are really fucking expensive. The ones I bought were like $3 with free shipping. Can't find them anymore for some reason, and not going to log into my amazon at work to track 'em down.

Sure you could turn the toaster on it's side for grilled cheese, but I think there is a lot more potential here. Plus, they're reusable.
Personally, this is my favorite way to reheat pizza. Toaster Bags
I'm going to go out on a limb, here, but this Mitsubishi BO-R65JB-R is apparently "Made in Japan," if you wanted to try something different. It has very good reviews on Amazon Japan and Rakuten, and it's very simple to use--the top knob is temperature (celsius), and the bottom knob is timer (minutes).
I bought these (even cheaper) a few months ago. They're still working fine.

SHUT UP AND TAKE MY MONEY!
HERE! toaster bags. my cousins showed them to me when I visted them and my eyes have now been opened. The person who made these is a genius, much more so than the idiots turning their toaster on its side.

these things are awesome for doing this thing!
