In brewing beer, I use a chugger pump
I move boiling water (212° F) with a plastic head on it. You can get stainless heads for them
That's pretty much the definition of a well pump. About $100 bucks for the cheapest one, which should serve you fine.

It's literally made to be dropped down a well and operate while completely submerged. That tank won't even come close to straining the pump. Even the cheap ones can lift 150 feet.
Heck, if you don't really need pressure or a fast flow, you could even just use a submersible fountain pump.

That one is $20 and will lift 7 feet, which looks like it might even be enough for your needs.

It has the advantage that you can actually install it inside the cabin. The disadvantage is that it needs to be primed (filled with water) before it works, and if the hose between the transfer pump and the water source gets air in it, you need to prime it again. So you'll need to install a one-way valve after the pump to ensure water can't drain out. It's also limited to a rise of a maximum of about 33 feet, possibly less depending on the strength of the pump. That's the limit for raising water by pulling it from the top (rather than pushing from the bottom, like submersible pumps do). But, again, that doesn't look like it will be much of a limitation for this specific application.

It sounds like the second would be the one to go with, since it has the ball valve? It also has a check valve, which I think the current tee has, hiding under the wrapping. Is that necessary? I'm not sure if that is meant to keep the water from flowing back down the well or what.
I think my current switch is a 30/50, would it be a bad idea to go for a higher switch to have more water pressure?
I did check the tank, it seem like it is at a good pressure (28) and sounds hollow.
Well for the price of the second one you could almost get a shallow well pump, which would likely be more robust and have greater flow. Something like one of these:

yea that pump isn't going to give you enough oomph to run those sprayers I think something like this would be more useful. sump pump . put an adapter on the line to the misters and run a hose from the pump to it that will also isolate the vibrations. Just throw the pump in your water reservoir. I will have to try it myself. See you in the dust )'(
They sell pressure tanks for your main line at lowe's/home depot, blue like this, needs a plumber to install. It has a bladder with compressed air that increases flow on the main line up to a point, bigger tank = longer high pressure. Every house I've lived in that had a well or water softener had one.
