I don't know if it's the case with your situation, but the "1-disc" description is likely a mistake. For the Korra Blu-ray on the US site, it still lists it as "1-disc", when it should be 8 discs.

Maybe they are different versions, but this one would probably still have 17 discs. Avatar Blu-rays should still play for all regions.

In which country do you live. If it is anything other than the US chances are that you can find at least one of the series on either Netflix or Amazon Prime Video. You can also buy the blu ray/dvd sets for ATLA and for LOK if streaming is not an option.

There are not really any "extra scenes" as far as I know but if you really want to get everything avatar related you might be interested in the comics. Here is a guide to all currently released and future comics.

If you are interested in supporting the creators, Amazon has the complete series Blu-ray for $30.

If not, then kissanime is an option, like be_as_water said. For downloads, /r/megalinks is a good place to look.
