(All-in-all, for 95% of people, it's better as is, and even less confusing as you'll never plug headphones into the microphone port)

Many of them come with dual connector or a way to switch to it - I believe some Razer ones do right now and I know my Astro A40's have a detachable portion for switching between the separate or combined connection.

The problem is the cable. The 3.5mm end looks to the iPhone as a TRS stereo plug (headphones). On an iPhone, there is a TRRS connection with the Tip being Left channel out, the first Ring being Right channel out, the third ring (if present, else this is the Sleeve)is Ground, and the Sleeve (only on TRRS connections) is mono unbalanced mic in. Note that on android and other devices that use the Nokia standard, the Sleeve is always Ground and the second ring if present is mic in.

I use a Tascam iXZ which accepts XLR, 1/4" instrument level in (these two modes use two AA batteries) or 1/4" Line level (no power needed). These can be balanced or unbalanced but they have to be mono.

This will work fine with the Lightning adapter. It has a stereo audio out as well on the back if needed. ~$50.

There are devices, I thing the iRig HD or the iRig 2 (which is why I use the Tascam, I don't know) that do similar things for ~$40.

This likely would work with an unbalanced audio cable from the board.

Edit: I just tested my Rockit adapter with a balanced output from my interface and though I could hear it, it was very quiet and slightly distorted, as would be expected. It really needs to be an unbalanced TS connection. The Rockit was also mis-marked for mic input, go figure.

There are three RCA to TRRS 3.5mm video cables that can also be used, but you need an RCA out somehow and the color codes are usually wrong for this purpose.

The iPhone has a TRRS connector (3 ring mini-jack) that combines both the headphone and microphone jack into one. The way to separate them is throught a headphone/microphone splitter. Since you're using the rode videomic, the one I highly recommend is the Rockit. It's only $12.95 on amazon and I prefer the design of this one prepared to the others. You can always DIY it too, if you don't want to wait for shipping with plenty of instructions on the internet.

The headphone jack will take an iPhone headset, and both the mic and headphone part works.

Ah, I see. That's a simple Y cable. No, that won't work. Your lapel mic plug, unless it's specifically made to plug into a phone, isn't long enough to reach the tip of the socket where the mic input is. Instead, it's shorting out the headphone parts of the jack.

There are splitters that break out the headphone and the mic input to separate jacks, so you can plug in conventional headphones and 1/8" plug mics. Most of those that I've tried don't work at all on iDevices. This one does, but not always.

Are you trying to record a phone? or a PS4/Xbox One controller? Either way you'll need something like this Splitter. Look at the bottom picture it has examples of plugs and what kind of adapter you need. But you'll need this to start with then you can use adapters to send out the stereo audio out to the mixer. The only thing is it will only capture the game sound and friends talking but not you (if you're using a PS4/Xbox One controller). If you can fill in more details of what you're trying to capture I might be of more help.

The thing is regular audio splitters don't generally have the right connectors for the cell phone side.

It would be much easier and cheaper to buy a pair of in ear headphones with a microphone already there, but for your situation I think you will need some kind of splitter that is able to split the audio port into seperate audio and mircophone jacks.
