I am a big fan of shellac on pine.
This is my "go to" brand.
You can also get it in quart sized cans that you brush on, but I prefer to spray it as the finish ends up much smoother.
Brushing on would be cheaper, but the spray, in my opinion, is easier and faster and you end up with a better looking job. But... that's just me.
So then, do your gel stain, let that dry for a day. Get a can of shellac and put on a coat of that. Let it dry for an hour or so, then 3-4 coats of a wipe on poly and you should be set
