Squid ink might be hard to find in your area. If you happen to live in NYC, Buon Italia in Chelsea Market has squid ink, bottarga, and tipo 00 flour. Otherwise, Amazon has Tinta la Calamar and bottarga although it costs more.

Hopefully the recipe is clear, but feel free to ask any questions. I'm getting ready to go out to dinner so I'll either answer them later tonight (if I'm not too drunk) or tomorrow.

i bought this kind. for 1 cup of powdered sugar i only added 1/8 teaspoon of the blue coloring. it came out pretty pastel blue which is what i wanted. i was also interested in what it would taste like. i didn’t notice any strange flavor, though. you might if you make it a deeper blue.

Not black enough. Honestly, do you people not know how to make "goth" food yet? Activated charcoal. Or squid ink. Or put anything on top of some forbidden rice and call it a day. 10/10 would try again. In the case of ice cream, I'd use activated charcoal.

Honestly, I'd just use an edible marker. It won't have the 3D look that the icing would, but it'll still look nice. :)

These are the ones I use. They have a sort of flimsy felt tip that's good for varying line widths. If that's not ideal for you, I'd suggest these instead. I think they're the ones Sweetambs uses, but don't quote me on that.

Or you can always order a size 0 or 00 tip if you're dead set in writing with icing. If you still have trouble with bleeding and stuff, try making the icing just a little bit stiffer ( but not so stiff that the line breaks when you're piping) and see if that helps.

This is a recipe I tweaked slightly from the restaurant I used to work at.

2 1/2 cups ap flour

1/2 cup semolina

3 egg yolks

2 large whole eggs (large is the industry standard)

1-2oz whole milk (good slash)

splash olive oil

salt

Combine using standard pasta process. This recipe can be finicky though, and sometimes I have to add an extra egg depending on how moist the flour is and other factors. The original recipe from my chef at the time called for all all purpose flour, which is all well and good if you use only whole eggs. I found that using only ap flour caused the dough to be slightly to wet and a bit soft, not matter what I adjusted. So I decided to add a touch of semolina to help dry the dough a bit and give it the structure that it needs to hold its shape well. I also bumped up the egg yolks a bit because I personally enjoy a rich, eggy pasta. The milk in this recipe also adds more fat and richness as well as more protein to help develop the structure.

If you were looking for exotic colors and flavors and whatnot, a few things come to mind. Spinach Powder will make your pasta green and obviously give a mild spinach flavor. Squid ink will make it black which looks really cool. Tomato powder will obviously make it red and give a mild tomato flavor.

One downside here is that it'll just sort of look like you're adding a multitude of white powders and clear or white oils together until you add the dyes. And these will require a little extra start up capitol, and the procurement of a few more jars, but I think it's fun to actually end up with something after all of your "hard" "work" in game.

This will add some detail to the sides of cakes. I like it more than the Wilton one (that is not textured) it’s thinner so it leaves a sharper edge.

Another option is you can sign her up for a decorating basics class at joanns or Michaels. It’s been a while since I taught- and it’s gift that will end up costing her money (you have to make cake and icing 3 out of 4 weeks of class- and she will probably want to buy extras). You can buy her the basic course 1 kit- but she’s still need to buy other things and i told my students to expect to pay about $100 all in with Wilton supplies, using some coupons, ingredients and extras. They could do it for less... or a hell of a lot more.

What city are you close to? I can search for a good cake decorating store- not chain that sells things like 1 box for cupcakes or 1 board for a cake.. you can pick up some small but super helpful things for a few dollars.

This is the set of gel colors I have at the moment, and they seem to be working really well. These were made using Royal Blue. I don't know how much I used though, just enough to make it as dark as I wanted, probably 7-8 drops or so. This set has a black, which also seemed to work well when I tried it. I know a lot of people highly recommend Americolor gels too.
