If you can't find the oven, I've done acceptable baking over a burner ( propane for the heat source, but assuming mad fire and wood skills, general concept transfers). Uses a cast iron Dutch oven with a riser of some kind, so your baking dish doesn't have direct contact with the bottom, and covered with an insulator. this is the one I use. Reviews seem solid for wood burners also.

I recommend the Weber Smokey Mountain 18.5. It's big enough to hold 6 5-lb pork butts, and is the perfect size if you're feeding a family of 4 or entertaining 4-10 people. The WSM 22.5 will feed 8-16 people, but the down side is every time you smoke for 4 people, you're paying to heat up all that extra volume.

If you want to go propane, I recommend the Smoke Hollow 44. If you buy a propane smoker for less than $200, it is almost guaranteed to be leaky, and you'll need to modify it.

Get a Maverick dual probe thermometer. One probe for smoke temp, one for meat temp. Clip the wireless monitor to your pocket and it warns you if either temp drifts outside the parameters you set.

I'd recommend avoiding electrics to start. The Smokin-It #1 or #2 is a great choice, but a common issue is that the voltage drops off if you need to use an extension cord...and almost everyone needs to use an extension cord. This can cause issues with heating. Don't buy an electric under $300. They are almost all cheaply made in China and are notorious for working a few times and then the heating element starts to fail. No user serviceable solution.

you could cook with an electric stove with a wok. (won't be exactly the same) but... it will work. they even have electric woks, like electric skillets.

We had one of these grills like this for years, because we too lived in apartment complexes that wouldn't allow a grill with an open flame or charcoal on the balconies. so We did Not ask... we just got one and grilled on it. it works pretty good. takes a little bit longer than gas or charcoal but still works well. But ours were not infrared like this one

If you find you have to go with a totally indoor type. the Cuisinart griddler five is GREAT! Watch for sales sometimes you can get them for 60 dollars. they are a grill, griddle, and you can get waffle plates for them. the plates go right into the dish washer and it is very easy to clean up.

If you want the stainless steel yakitori grill they use in Japan, follow the link below. It's the same grill I've been using for years and it's worth the money. Just be aware that binchotan charcoal is very expensive. You can get Sumi charcoal that can get you three-quarters of the way to the heat, but it can't quite replicate the white oak.

This product has been somewhat successful. It is on amazon for example Typically sells for $20-$30. Kind of heavy from the use of rock.

  • Can it be reused?
  • Can it be refilled with regular charcoal briquettes?

That standing Coleman is nice; a little big for what I use but if you are looking for something smaller and even more portable, I have the Son of Hibachi for my charcoal needs and the Fuego for my gas needs. Take a look at both. Read up on them. Both cool for different reasons.

I bought the cheapest one off Amazon, it was $10. It works well. I only used it one other time for a quick and high temp cook where the grill itself isn't making much smoke and I got the flavor of the smoke.

If you want any kind of smoke from a pellet grill you need to keep it under about 225. Pretty much the nature of the beast, regardless of brand. It takes some time to get used to using a pellet grill, but once you master it, it's a great tool. As with most any grill you can increase the amount of smoke by using something like this:

Some friends of mine have Son of Hibachi grills for when we bike to the lakes in summer. When folded they fit into a pannier bag. Works well enough, the chimney thing is nice, but the "snuff out pouch" is kinda iffy - we managed to melt a corner of it. Probably should read the instructions and figure it out before grilling and adding beer to the equation ;)

Never tried that one. I was a bit hesitant about it being just a bit too small. I got this one a couple years back (although it was $20 cheaper). Worked quite well (I'm in a house now with a larger outdoor smoker, so haven't used it in a bit).
