We use Kodiak Cakes pancake mix. It’s whole grain high protein. I’ve added a scoop of protein powder before and they didn’t come out dry. I also add applesauce or Greek yogurt to the mix sometimes. Might not be exactly what you’re looking for but damn they are delicious.

The mix comes in different flavors like buttermilk, dark chocolate, and there’s a peanut butter flavor but I haven’t tried that one yet.

In stores they’re always like $5.50 per box but amazon sells 3 boxes for ~$14 so it’s a little cheaper.

I use the Krusteaz brand - called light and fluffy pumpkin spice. Most major groceries (if you're in the US) carry it and I normally get it at Costco.

Pancakes are cheap food that every student should know how to make in his/her own room. Here's some advice about how to do this. Buy pancake mix that specifically says "Complete" on the box. That means you only need to add water. I suggest that you buy a large 5lbs box like this, because it's the most economical. A large OXO food storage container is useful to keep the mix sealed and away from pests. Also buy one of these Bisquick Shake-n-pour bottles so that you can reuse the bottle if you've got a fridge to store any extra batter. A little spritz of cooking spray is all you need for pancakes or waffles, but you may need to add some cooking oil to the batter for waffles in order for them to brown, crisp, and release from the iron. Non-stick electric skillets are easy to find. Amazon will probably have same-day prime delivery to your room. Students can sign up for Amazon prime for free. The trick for pancakes is to use very little oil and medium-low temp. Wait for the bubbles to rise on the surface of the pancakes twice, using a spatula to check the edge for burning. It's better to start with low heat and only gradually increase it to speed up cooking as you learn the proper setting to keep it on for multiple pancakes. The items I linked are just examples. Feel free to use whatever similar items that you find instead.

I use Hodgson Mills instabake mix myself... I also add an extra egg and a half cup of oats to the batter. It's not going to be light and fluffy but it isn't gritty or mealy either.

If she was born and raised in Hawaii and went to school here, she will definitely be familiar with li hing mui! The seeds are these little sour dried plums, and like /u/thefightclubber said above, it is also very popular in powdered form. Along with pineapple, it basically goes well with all sorts of fruits from apples to oranges. Things like li hing mui gummy bears and other gummy snacks coated with the powder are also very popular here.

I am really, really terrible about breakfast but I'm trying to be better because I think I end up binging on lunch/dinner/snacks if I don't eat every 3 hours-- especially if I want to ramp up my running! I learned a few months ago that on weekends I really like protein pancakes (kodiak cakes brand, found at target). Weekdays have been terrible as usual in the breakfast category, maybe a granola bar or yogurt. Found these protein flapjacks-in-a-cup deal at target. OMG THEY'RE GOOD. I haven't quite gotten the texture right, but its like pretty legit at 200 calories and 10ish? grams protein. Alright, I did some math.

Based on the back of the box, there is 150 calories in one serving of Bisquick pancakes. One serving uses 1/3 cup of pancake mix. So, given that 14 pancakes is 2 cups, that means that you get 900 calories out of 14 pancakes. This means that with 4 cups, you'll get 28 pancakes worth 1800 calories, which is plenty for a normal adult. Add some syrup if you need more.

On the back of the box, we can find that there are about 68 servings of 1/3 cup Bisquick mix. This means there are 22 2/3 cups in a box. also means that you'll get about 5.665 days of calories with each box. Therefore, you'll only need 65 (actually 64.43) boxes to last you all year. I was able to find the exact box on amazon, and it only costs $12.79.

Therefore, for a cheap $831.35, you can get all of the pancake mix you need.

...But you still need eggs and milk! Now, 2 cups of pancake mix needs 1 cup of milk and 2 eggs. Considering we will have ~1460 cups of pancake mix, we'll need 730 cups of milk and 1460 eggs. 16 cups to a gallon, so we'll need 46 (45.625) gallons of milk. Milk in Indianapolis apparently costs $1.50, so add $69 to your yearly bill. Next, a dozen eggs costs $1.56 and we'll need 122 (121.66) dozens, so we're spending $190.32 yearly on eggs.

Add up all of our costs (831.35 in pancake mix, 69 in milk, and 190.32 in eggs) and you get $1090.67. Not terrible. So, for $1090.67, you can eat 28 pancakes a day, netting 1800 calories a day, and go through 65 boxes over the course of a year.

TL;DR: You need a bit more than three boxes, but only if you eat nothing by pancakes.

You never mention what brand/bag of flour you're using. Sometimes I use Otafuku's flour for okonomiyaki and their recipe always comes out fine. This Amazon link provides good images of the process (texture of batter, vegetable/batter ratio). But I definitely still prefer the cooking technique from No Recipes.

BREAKFAST: Pancakes. I buy the "just add water" pancake mix so it's super quick and easy to whip some up, and they're really filling which is great.

I buy this at Aldi. It's like $1.89 a box. They also have real maple syrup for $6.49. If you've never had it, buy it. You'll never go back to that corn syrup-based nastiness again.

LUNCH: Leftovers from a previous night's dinner. I have a cheapy $6 lunch kit from Dollar General, and some glass bowls with plastic lids that I take it in.

I got these cheap at Big Lots (like $3 I think), except mine have red lids instead of blue.

DINNER: Can be lots of things. allrecipes.com and cooks.com have some good simple recipes, as does pillsbury.com. FYI, pillsbury.com's Reuben Casserole is like crack in food form. It's so addictive and so tasty.
