Not OP but I just got this bag off amazon. It fits my longer S8 and my bluetooth speaker perfectly. I'm very please with the purchase. It does have hole for headphones too.

If you're running tubeless you probably should be running sealant in your tires. Fat tires are pretty thin skinned and puncture easily in my experience. Stans, Orange, Slime are all popular brands.

If you get a hole that won't seal there are plug kits like this that can be installed from the outside, or patches like these that install on the inside.

It seems to do a great job. I am not sure of its accuracy, but even if it is slightly off I am okay with that. If I torque something to 5nm, and it is actually 4 or 6 I think thats okay. My main concern before getting it was that I was torquing things that should be 5nm to 15nm because of not having a way to gauge how hard I was pushing. I think it only "clicks" in one direction so it is not perfect for torquing lets say my BB on the drive side that threads opposite. But for daily use it seems to be great and not super expensive. But if you have the disposable income to spend, get the park tools version.

I use something like this to give it a good spray down any time it's subjected to salt. It's not as good as actually cleaning it, but certainly better than nothing.

Yeah, I get claustrophobic when I'm attached to the bike, especially in snow and ice. I tried clips for a couple of months and just decided to upgrade my flats instead. I can't imagine pogies are much different. I just found a cheap pair of lobster claws instead (https://www.amazon.com/gp/product/B005T2ADYW/)

As others said, shifting is probably clunkier with big gloves, but they're still super warm.

It's my first NBD post, so thanks for the tip. :) I will remember that next time. (Seems obvious now.)

The bag is a Large Topeak Wedge Drybag (https://www.amazon.com/Topeak-Wedge-Drybag-6-9x4-3x4-5-Inch-Medium/dp/B007I7WP1U/ref=sr_1_1). I haven't gotten a spare tube yet, but I hope to try and squeeze one in there.

I have that OMM Phat Sherpa and recommend it. They will email you to measure the length/thread pitch of the axle and get the make/model when you order to make sure it is the right one.

I would also get a seat post clamp that has rack mounts like this. Looks much nicer than the hose clamps.

Really cold (like <10°F). I like that it wraps down over my ears. And I can stick some speakers in them. Also gives me a nice permanent perch for one of my lights.

I usually wear thin hood/balaclava under it. When its really cold, I go with a full face balaclava and some ski/board goggles.

Here's the dual headlight setup. The fluted lens is the flood beam I have aimed low to illuminate right in front of the tire. The clear lens is the spot beam and has a really good throw. The lights are attached with a rubber band type attachment that hold position really well, but are easy to adjust on the fly without loosening any bolts or brackets.

Here is the tail light. Dirt cheap and it glows red which is all I care about. My only complaint is the plastic mounting bracket. I've had it come loose a few times over some bumpy terrain, but haven't had any issues since I reinforced it with some washers.

On Guard locks are fine. I have two. Depending on where your from and if you’re leaving your bike outside for more than an hour or two I’d buy a Kryptonite chain in addition.

It would mount to a curved bar with no issue. The NiteRider mount is fully adjustable horizontally and vertically. Horizontally the plastic mount rotates thanks to a screw and nylon lock nut. Here is a link: http://www.amazon.com/NiteRider-Lumina-Handlebar-Mount/dp/B008KCL6YO

It would work for your application where you need to point the light in a non standard direction on the mount because of the curvature of your bars.
