Here is a pic of my rig with this bracket. Even under full load at ~2075MHz, the fans on my 1080 Strix never hit 60%.
I used a PCI slot bracket for the fans i found on amazon. Link Below. I did have to modify it for this case just a little bit. Was easy though, used a hack saw to shave off what i needed. Very simple. Came out great and the GPU stays extra cool.

FWIW, it totally depends on how budget sensitive you are. Based on the hardware you're talking about, it sounds like budget matters quite a bit.
In the USA, you can pick up a Dell H200 or H310 PERC card for ~$30, get the appropriate SAS to 4 SATA breakout cables for under $10 each, and flash the card into IT mode. If you want to get fancy, you can point a fan at the chipset heatsink to account for lower airflow in most cases in that area (I used a PCI slot cover-type fan adapter slow shipped from china and a single 92mm fan I had around). It's an extremely popular way to get a few more ports into your datahorder build and the card is well supported by most software. I operate it in pass-through, so I have no idea if you should use it for RAID or not.

I'm currently looking at the G12 bracket, and IMO, there's plenty of Dremel-y potential there. Trim off the front lip and the little fan cooler to the side of the water block mount, thermal tape some little heatsinks to the VRM/RAM/whatever, and use a PCI slot dual fan bracket below the card, pointed at the heatsinks and PCB to cool everything else.
It's a DIY hybrid cooler. Hell, if you have a 3D printer, you could even make a proper shroud for it...
I already have a Corsair H50 lying around in a parts box... I might just do some redneck engineering this weekend on my 5700XT.

I will be mounting my own 120mm x2 with the fans blowing up towards the card ( the fans are pointing down like standard open air GPU's )
Do they really work ? I am wondering if putting it a way to blow towards my Gigabyte RTX 2080 Windforce edition would help the air move a little better to cool my card just a bit more. Thoughts ?
