Mini DP to HDMI via this cable.
Definitely no need for adapters. There are several Mini DisplayPort to HDMI cables at various lengths. I’ve been using two of these for years without issue.
Those cinema displays were 1680x1050. Your Switch is outputting 1080p. That’s your problem.
EDIT: There was ONE 27" Cinema Display, but it was from 2013, not 2009. This one had a glass screen, the others did not. It was 1440p, which would mean the issue is going to be with the fact that you're stringing 2 converters together, and something is getting lost in the sauce.
EDIT 2: Why chain all the adapters together when you can just use one cable?

In that case, a mini displayport to hdmi adapter will give you the best quality.
Not sure if you're in the US, but this one on Amazon.com for example would get the job done.

Forgot to mention that, any passive Mini Displayport to HDMI cable or adapter will work as the port is Dual Mode.

There's a Mini DisplayPort to HDMI cable in the wild that may work for you. The one Belkin makes is about $30 (though the quality is really nice) but there are cheaper options available.
The T470 has one. But these are cheaper...

If you're talking about this cable then I wouldn't recommend it if you plan to output to any resolution greater than 1080p. Otherwise, good deal.
Come to think of it I don't think you have control over your drivers, Macs are locked down and you only get what Apple serves via the Apple Update Center or whatever it's called.
Are you using the HDMI cable that was included in the box? (If one was?)If you're not you could be using an older standard HDMI cable which doesn't have enough bandwidth.
I'm very surprised to see that monitor only has one input.
Is your adapter an actual cable or do you have a box converting a mini displayport into HDMI?
I feel like the issue lays somewhere in your connection method or cable, do you have pictures or model numbers of the adapter perhaps? Did you buy it recently? Is it really old?

This would be an ideal straight connection from your laptop to the screen. If you're using an adapter box as well you'd need to check that is built to transmit HDMI 1.4 as well, the cable is cheap enough you should just do a direct connection.
The Cintiq Pro 13 should have the Wacom Link adapter bundled within the box. The adapter is used to connect the Cintiq to the computer via displayport and usb type A (the normal standard looking usb connector).
The older version of the adapter only has mini display port,

You'll know if you have the old version of the Wacom Link because it's the size of a small black shinny match box. While the newer Wacom Link Plus is larger and has a grey color. I assume the newer batch of Cintiq Pro 13's should come with the Wacom Link Plus.
EDIT: The old Wacom Link Adapter may have connectivity issues with mini display port to HDMI cables. Wacom should be shipping out the newer Wacom Link Plus connectors which is compatible with HDMI. If for some reason yours is bundled with the older Wacom Link. You may have to purchase the Plus version.

Depending on how much you move around with it, I'd say either X230 or T430/T530.
As for HDMI, I'm not really sure if any Thinkpads have native HDMI (my X1 does, but it's pretty terrible in most other ways, so I wouldn't recommend it). Most tend to use either DisplayPort or Mini DisplayPort. Good news though, because DisplayPort can output natively to HDMI using a passive adapter like this

I don't know why you would need to mirror your mac on two monitors, but here goes:
Monitor - it's kind of hard to find a entry level monitor with multiple hdmi ports. This one has a single HDMI port.

I think that all adds up to ~$290 before taxes and shipping, bringing you to around $350.
Another alternative, if you need to extend, not mirror the mac, then an ultrawide monitor ( I have this one ) will allow multiple inputs, meaning xbox and mac plug into the same monitor. The screen real estate wil be about 1.33x wider than a single HD screen, but it can do 2 windows side by side no prob.

If you want to buy new, I doubt you will be spending less than $100. If you are fine with used, keep an eye out on the subreddit I mentioned and eBay and you might be able to get lucky.
You can also convert (m)DP to HDMI (which I am doing for my P400) if you need to.
The older Quadro 2000 can handle 2 DP + 1 DVI, and you can convert one of the DP to HDMI for the TV. Also, there is this on NewEgg, but it is used, so ymmv.
The T430s would be a decent choice for him. If you do get one, my recommendation is to swap the HDD it was shipped with in favor of an SSD. You'll notice the difference. As far as RAM, the max supported amount is 16GB (I doubt your son will need that much RAM, but in conjunction w/ the SSD this machine will FLY). Swapping out each of these is incredibly easy. The processor, however, is soldered to the board and can't be swapped (unless you have access to a BGA rework station).
While it does not come w/ an HDMI port, it is equipped with a mini DisplayPort and standard VGA, both of which can be converted to HDMI using an adapter.

There are dozens of good monitors for the price point you're aiming for at the moment. It all depends on what size you're looking for. The main thing is the ports on your laptop. Seeing as your Lenovo T460 has an HDMI port and a Mini-Displayport, you'll need to 1. Have an HDMI cable for the first monitor. 2. Buy an Mini-Displayport to HDMI cable or a Mini-Displayport to HDMI converter such as these:

Why not just use the existing HDMI port and a Mini-DP to HDMI adapter? Much easier and cheaper as well.
