The arcade cabinet has a PC in it running emulators. It connects to an arcade monitor using a specialized video card. It forces the CRT to draw the old games at the original resolution.

The NES pad is connected via a USB interface like this one.

If it's about the controller, I'm sure there are adapters to USB for pretty much anything. SNES, NES, Playstation. Of course these are of varying quality since I just pulled the first thing I found, but it's not too hard to adapt the most nostalgic part of the hardware to work with modern equipment.

And with something like the NES/SNES classic, the rest of it is exactly like an emulator. No cartridges or anything, just a ROM library that you choose from. The UI for game selection is going to be marginally better than an emulator would be, but that's about it.

I looked into this a while ago because I wanted to use a PowerPad as a midi controller. You can use something like this with a regular NES controller: https://www.amazon.com/RetroBit-Adapter-Controller-Nintendo-Entertainment-System/dp/B004L5KHKS

But it won't work with PowerPad or PowerGlove since they have different output. For those you have to do something like this: http://www.instructables.com/id/Hacking-a-Powerglove/

I would recommend though buying an adapter so you can use official NES controllers instead of the lesser quality aftermarket controllers. Link

Please note that I have never used any of the two products I listed. I just used them as an example. I do recommend to shop around to see what would best fit what you want this rig to be.
