You might try something like a munch mitt - kind of eliminates at least half of the coordination issue and it might give her hands time to heal while still allowing her the ability to chew/suck.

My husband and I went to daycare on our daughter’s birthday to sing a song at snack time. I remember feeling like it was totally silly, but the teachers were genuinely excited to celebrate and it was very sweet. I think it’s totally unnecessary to give anything to the class, but if you decide you want to, here are some ideas —

Someone at our daycare gave out these teething rings as a “party favor.”

Someone else gifted everyone little rubber ducks with a note that said, “I’m a lucky duck that you celebrated my birthday.”

I use silicone teethers. They can be washed more easily than chewies (top rack of the dishwasher if you want to be thorough) and come in a variety of shapes.

My favorite is this gray whale from Bumkins although I also like these ZoLi bunny ears. The latter is great when you really need to seat those back molars.

I don't know about organic, but my nerdy self LOVED the fabric choices by 'greenleafbaby' on Etsy. (I got LO a harry potter and a star wars one lol) They were really great quality, and the back is the 'minky' fuzzy fabric so it's comfy against LO's skin.

For teething: Motrin AND tylenol on hand. On bad nights you can alternate them to overlap doses just a little, since they're different active drugs. Motrin lasts longer overnight, too. Poor baby, teething is terrible! I hope you get through it soon and everyone starts sleeping! I get told I'm mean all the time for sleep training, but I am a MUCH better and more patient parent when I get some fucking sleep.

I can't comment on what might be causing it, but as a chronic teeth grinder who has to wear a mouth guard, I ended up buying some "sensory" "chew" necklaces for use during the day. These look pretty non-descript, and holding it in my teeth keeps me from clenching down:
