I posted this a few days ago, but posting again because I love it. This is my version of Keto & Co's plain hot breakfast.

My current breakfast obsession is:

  • 1 Tbsp coconut flour (15g)
  • 1 Tbsp ground flax (6g)
  • 1/2 tsp guar gum (not sure if this is necessary, you can possibly sub Xanthan gum but I haven't tried it)
  • Tiny dash of No Salt because why not
  • 1 cup of water

    Stir the dry ingredients together, then add water and mix well. Nuke for 1.5 min. Comes out very similar to malto meal or cream of wheat. I add 2 Tbsp butter and a ton of cinnamon, tiny splash of vanilla and 15 drops of ez-sweetz (sucralose) cause I like it sweet. SO freaking good and hot and cinnamon-y.

    Macros for the whole thing, prepared as above: 303 cal, 4 net carbs, 3 protein, 27 fat.

Toaster - $8.88

Cereal - $0.47 each = $0.94

Milk - $1.29

Apple - $0.49

Bread (for an entire loaf of 14 slices) - $3.62 / Two slices = $0.52

Entire meal with toaster: $12.12

Entire meal without toaster: $3.24

All depends on if the toaster was theirs to keep, which I doubt. But those are just quick searches and items found online which anyone can order. I'm sure you can find better deals with more searching and with local stores

I am Indian, so I really missed naan after going on keto. Here's a great recipe I found.

I also love Chipotle's sofritas but idk what they put in there and I assume it is salty, so I made my own using this recipe.

I also really love crackers, and I found a great replacement on Amazon called Flackers (they're made from flaxseed)

I really like this pea protein yogurt topping too and this healthy keto friendly granola

It's 2 points for a half a cup (I had a whole cup for 4. Why the hell not? :-)). It's actually a Paleo product, but it works for us, too. It's coconut-y in flavor, and is sweetened with monkfruit, which is the only zero-calorie sweetener I can stand. I've never seen it in a store, but Amazon was quick.

Restaurants: FL has a lot of gluten free, and amazing seafood.

Grocery stores: If you can find it, Canyon Bakehouse breads are amazing. Also, anything NOT corn. I've found most countries abroad are mostly corn in their gluten free stuff. Here we have a lot more tapioca and rice. It provides a much lighter texture and flavor.

I need breakfast stuff for the kids. I was just saying how much lunch was costing me because it has to have wheat, dairy, veggies, and a fruit if it comes from home. Meanwhile I have seen them give a half a hotdog roll as wheat. They are picky so it's hard to make one thing they both like and won't go bad before lunch. I have been trying to change my grocery budget and any of these items would help.

Instant Pot Oatmeal- so easy! Recipe from my site- https://veggiechick.com/instant-pot-oatmeal/

  • 1 cup steel cut oat (or regular old-fashioned oats)- gluten free if desired
  • 2 1/2 to 3 cups water, depending how how thick you like your oatmeal
  • Topping ideas: Date Paste, strawberries, bananas, blueberries, blackberries, apples, pears, golden raisins, chopped medjool dates, cinnamon, flax seed, coconut flakes, peanut or almond butter, maple syrup or agave, brown sugar, all kinds of nut, vegan chocolate chips, etc.

    INSTRUCTIONS


  1. Add the steel cut oats and water to the Instant Pot. Place the lid on the Instant Pot and lock. Press the “Porridge” button if your pressure cooker has one (or you can also use Manual/Pressure Cook). Set to 6 minutes, and turn the knob on the top of the lid to ‘Sealing’ (not venting). The Instant Pot will automatically turn on and start to build pressure. After about 10 minutes, the timer will set to 6 minutes and it will begin to cook.
  2. After the 6 minutes are done, let it sit for an additional 8-10 minutes to release the pressure (you will see the L0:02, etc. on the screen which means it is releasing pressure on low heat). When the pressure is released, remove the lid. (Note: If the pressure is not released, you won’t be able to open it).
  3. Stir and add the cooked oatmeal to a bowl, and add toppings of choice. Store in an airtight container in the fridge for 5-6 days. Note: the oatmeal will thicken more as is sits. See more important tips on post.
