I'm not sure if you can get it by the quart, but you can get the 1/2 gallon or 1 gallon.

Edit: Just playing with the $ side. I pay around $3.49 for a 5 oz bottle.

The 1/2 gallon is equivalent to 12.8 of those and saves you $15.24 after shipping. The 1 gallon is equivalent to 25.6 bottles and saves you $33.41.

The simple answer is that you get used to it.

I always thought that I can enjoy however spicy sauces. Perhaps because my father used to cook spicy chillies since I was child.

At first, just attempting to smell the sauce gave me goosebumps. I ruined a dinner for myself and others by putting a dab of it into chilly... However, eventually I would more or less cover a chicken wing with the sauce and utterly enjoy it.

Problem with the hot sauces is that while you do get used to the sensation (I would go as far as to say that it is addictive), what you don't get used to is the next after. Pretty much the only reason I don't use Blairs sauce anymore.

Egg Scramble. It's the best way I've found to clear out left over veggies for breakfast. Start with the mixings that take longer to cook (onion, asparagus, zucchini, toss them in whatever sauté pan is usually on top of the stove, along with a little Pam/bacon grease/oil/whatever lube you love. Add in the quicker-cooking veggies (spinach is my fav), then crack a couple eggs on top and stir until done. Season as you choose: the best I've found so far is a little s&p, and then some Tabasco Chipotle Pepper Sauce. Toast and a banana rounds out all the food groups, and gets me ready for the day. I love breakfast!

Tropical Pepper co's ghost pepper hot sauce is one of my favorites. I'm not sure if it hits their claimed 500,000 scoville units mark, but it is pretty damn hot. The naturally fruity flavor of the ghost pepper really comes through. Ingredients are: Naga Jolokia Peppers, water, salt, acetic acid, garlic pulp, xanthan gum. I really can't get enough of it. Also a heads up if you wanna try it, you might want to try looking at a local carribean of some other type of ethnic market. One grocery store near me sells them for $2 and change compared to $9 that I linked on Amazon.

See if you can find El Yucateco black. It's not super spicy (probably a little milder than the bottle you have), but it's one of the best hot sauces I've tried. So smoky.

My pleasure! Another side note: since my method involves heating the fruit (brings out the sweetness and flavor), that generally kills any healthy bacteria on or in the fruit. The heated fruit would still probably ferment on its own regardless, but that's why it's important to combine with the fermented peppers and/or "used" brine. You want the healthy bacteria that you've already harvested to take hold of the ferment before any unhealthy strains do.

Tropical Pepper Co Ghost Pepper is one of my favorites and a local bar that I frequent actually uses it in their "scorching" wing sauce. Has some real solid heat and a really bright, almost fruity, flavor. They take their standard buffalo sauce, made with Frank's, and dope it with the ghost pepper to bring the heat up. The sauce carries a little bit of the ghost pepper flavor but still tastes like a classic buffalo sauce for the most part.

I linked Amazon (not affiliated) but I've seen it at pretty much every grocery chain around me in NC. It's generally $3-$4 in store.

Dave's only seems hot until you try Blair's UltraDeath.

It's only 1.1 million scovilles in normal form (I got some special edition that's supposedly 1.3m once)... Dave's Ultimate Insanity Sauce is 250k scoville. Of course, that's really a sauce and ultradeath should be diluted in something... (pretty good in teriyaki honestly).

My favorite quasi-ridiculous sauce is melinda's naga jolokia. It's only ~130k but tastes super good and doesn't have to be diluted to be painless. If you eat two dozen hotwings that are a combo of melinda's and ultradeath (with the requisite butter), it is like napalm+drano though, and you may rue your very existance... so I'll warn you ahead of time.

The best standard vinegary hot sauces from Mexico, imo: Tapatio and Valentina. Try them if you get a chance. They're nothing like Tabasco (which I hate, and it's from Louisiana, US).

Why settle for insanity when you can have death? This stuff is awesome. It is SUPER hot but tastes good to me. I couldn't imagine putting a whole bottle in anything, though.

Edit: Fuck, I looked it up... original insanity sauce is 180,000 scoville and ultra death is 800,000. Maybe something is wrong with me.

You're right, I am all of those things, and dudes are my specialty. (For the record, I do like Tabasco)

I find different dishes call for different sauces. The more sauces you try, the better of an idea you'll get for yourself what works with what. Note that the below links might not be the best prices and you can probably find a lot of these sauces at your local grocery store (unless you live in some cultural black hole like the American midwest). I spent my earlier years in southern California and developed a taste early on for Mexican cuisine, so my taste is highly reflective of that influence.

I enjoy these Mexican-style sauces:

  • Cholula - mainstream, overpriced, but decent


  • Tapatio - slightly more spicy than Cholula, a more peppery taste, for lack of a better description (on my part)


  • Valentina - One of the cheapest sauces I've come around, just douse everything in your path with it, similar to Tapatio

    El Yucateco is a great brand, in my opinion. They have a lot of awesome varieties. If you go to an authentic Mexican restaurant, you'll likely find it there:

  • Green Chili Habenero - Don't let the color fool you, this is a nice spicy sauce with a good flavor

  • Kutbil-ik Mayan Style Habanero - This is a different flavor, but it's great and has a nice heat profile

  • 4 pack Sampler - why not just try them all. $12 ain't that much, my friend ;)

    There are some other popular sauces which if I were to omit, people around here would be very angry:

  • Sriracha Hot Chili Sauce - This stuff packs nice heat with a garlicy-chili taste. I generally save it for Chinese and Indian food, and cup-noodle. Others like to put it on pizza and everything else. It is my opinion that they just don't have the right repertoire of sauces, but hey, if they like it, more power to them.

  • Frank's - You've already mentioned this, but this sauce and other similar Louisiana-style sauces are my favorite. Not very spicy, but they have a nice tangy flavor that goes great with Pizza, eggs, burgers, etc. Don't think about using this stuff on ethnic food, though. Stick to their sauces ;)

    There are a lot of boutique sauces out there that just pump out the Scoville units for the hell of it. A lot of them are gag gifts or novelties, but there are people out there that genuinely enjoy the rush you can get from them - you do get an adrenaline rush, it IS a high. Most of the sauces like this, however, are intended for cooking beef chili and other dishes where a small amount can be distributed through a larger portion of food.

Yay!!! Happy Quarter Century!!!! My birthday was Saturday (I turned 28) and it was honestly probably the best one Ive had in a long time. My boyfriend and I went on a little road trip for a street fair in a town outside of Dayton Ohio, we ate good food, bought crazy wines and liquors and walked around listening to bands on the street and talking to vendors. It was simple and relaxing. Here's a pic I took of us while we were walking down the street. We just look so happy. I haven't taken a good picture like that in a long time.

I've been to several hot sauce tastings and I've had Da Bomb. People aren't joking when they say it's disgusting. Seriously, don't buy it, it's gross. There are much hotter sauces around that are much tastier too.

This is one of my favorites. I got it straight from the guy who makes it at the last tasting I did. Great balance between heat (not overwhelming) and flavor.

I also love this one. It's so tasty that you'll want to try a spoonful. Don't. It's a delayed scorcher and you'll have a bad time. The aged and pickled scotch bonnet and scorpion peppers in it are phenomenal.

Harissa paste. A little dab of this stuff can pack a spicy, tangy, smoky punch and add flavor to a whole bunch of dishes--eggs, pasta, soups, casseroles, leftovers--you name it. My favorite brands are Cava and Mina. It's easy (and more economical) to make your own too, if you have a food processor.

If you like green sauces the Bronx Greenmarket sauce and Marie Sharp's Green Habanero are great options.

Any of the yellowbird condiments are also good starting points and they come in variety/sample packs, though you'll pay a premium for the sample sizes. They have a 3 pack of the 19oz bottles for about the same price as the 5 pack of tiny bottles but you get to try 2 less flavors. Cholula also makes some very good flavors, their Chili Garlic is among the best for less heat inclined people and you can also find it in most grocery stores.

Most of the non-green sauces that I use regularly are pretty spicy, I'm familiar with more mild green sauces because those are my wife's preference.

Also Butterfly Bakery of Vermont's hot sauces are on amazon, though they're cheaper on their actual website

Gotchujang(maybe spelled wrong).

It is a korean ingredient that is a fermented paste that is spicy. Interestingly there is no scoville rating for it because it's rated on a different scale of spicy. I don't know why. I like how the heat hits you and it has a wonderful earthy and sweet flavor.

I always put a teaspoon worth in teriyaki sauce to give it a little extra flavor with a cool little spicy finish. I also use it to make super spicy wings and sauce for fried chicken. This is what I buy.
