I think the lift-top coffee table definitely makes sense for eating, but may not be terribly ergonomic for laptop work. Have you thought about an adjustable laptop stand? That way she can use it wherever she wants -- on the coffee table, standing at the breakfast bar, hanging out on the couch. (A gel mat or folded-over yoga mat is nice to stand on, when standing.)
From what I can see in photos, most of your surfaces have items on them. Designating a couple of areas (e.g., the coffee table and the breakfast bar, or whatever) as "empty" could help make the place feel a bit calmer, and ensures that your partner always has a place to spread out if she needs to.

I ordered a Rock-N-Roller cart after I had to carry my drums two blocks for a gig.
It’s the best thing I’ve done. I can fit my whole kit (4 piece) with a big SKB hardware case and load in with one trip. And when it’s folded down it takes up very little space.
Saved time and my back.

Mine is pretty-much water proof but I got mine via a friend who worked at a vinyl sign making shop (he gave me some of the - usually discarded/recycled - lovely rigid threaded end tubes in which they receive rolls of vinyl). For maps and the like, both transport and long term storage, you cannot beat this sort of storage. Alternately, paper mailing tubes can suffice to keep flat things rolled/flat, but nothing beats a waterproof tube.
... next, you need to bring the game, make it easy on yourself, get a few of those 'hanging folder friendly' milk-crate-style storage crates. They will hold our favorite hobby-sized books, and much more. . . a few hanging folders can help you organize your printed campaign materials too. Anyone that doesn't is not serious. I walked in with my HTS in Catalog Display Rack. Resting on top of a rolling handcart which contained the rest of the reference materials.
My brother has one of these. Elevates the PC, provides a place to hide excess cabling, and if you take the front sticker off like he did, it's pretty subdued

It has never failed me. It is really nice and high quality, the pockets are great for storing extra stuff which I imagine elementary school teachers have a lot of supplies they carry often.
When it comes to your closet, yes - those organizing bins are brilliant. BUT only as long as you don't just throw/ram things in there and leave them half out of your shelves and what not. Keep your clothes folded and neat. I'd suggest getting either black or white bins where your bedding is black/white. Avoid any other colours given that you have a lime green wall in your room. Put all of your toiletries in one of those as well instead of a hair dryer in a shelf, deodorant on your desk, etc.
Other points:
Find a better home for both the helmet and printer. Put a draping plant up there or other decorations.
Tidy up those wires and cables
If you don't want to put shelves here once the couch is out, a framed photo or poster with a nice frame would look great there! In fact, /u/frostfall010 just made a great example
My suggestion would be to get one of those stand-up dolly's for moving boxes. Something like this. Relatively cheap and it even folds up to fit in a car. Not being from Sweden though, I'm not sure what Amazon's shipping policy and speed are, so you may have to find one locally. Then you just get some bungee cords to wrap around the computer tower so it doesn't slide off and you're set. Otherwise, if you have a large enough rolling suitcase/luggage bag, you could potentially put the computer in that and wheel it around.
Not as bad, but the second picture of this laptop stand clearly has a coffee mug photoshopped in.

Would something like this do the job well? I believe we used this same brand back when I was in marching band when we had to transport the subwoofer and monitor to and from the field and it held up pretty well considering how much we put the cart through.

Folding hand truck and budgie cords or ratchet straps should be able to be stowed. Put the hand truck on the back of the seat with the bungee cords, or lean the folded package on the back of your tower.

Hello, I'm pretty sure any no-screw operated stand is compatible with these tablets since both of these aren't made to be installed with screws on their back (they're literally just flat surface with rubber feets), and their usual stand just require you to just put the tablet--and that's it. In fact some have recommended going for the IKEA laptop/tablet stand or this kind of stand over the default XP-PEN one for cases like this. You just have to make sure they're the right size for a 16-inch tablet (and doesn't have to be for drawing tablets either, it could be a phone tablet stand at that size too). Hope that helps!

I have a light-weight folding dolly/hand-truck similar to this (mine has larger wheels which makes it easier to go over curbs etc). I then either put one or two(!) 31 gallon totes of games and chip-trays/chip-cases etc atop it (the largest size that fits easily in a back seat or in my car boot), or just a single loose stack of a couple games with a chip-case and trays on it. Either way the whole stack even with the 1,000-count chipset and games, or all three 300-count chipsets plus games etc, is easy to move around.
What cons do you have coming up? Daniel has been talking of making another run up there and I've been mumbling incoherently in response. (I've currently hit a wall with '20, and am of the puritanical character that actually going off and playing things rather than futilely pounding my head in the sand is a tougher sell)
i'm 2-days post-op and this was my 2nd surgery -- in addition to all the prehahbing (working out your legs, getting full ROM, getting the swelling down), think about practically what will help after surgery when you're stuck in bed or at home:
for me, this has been a life saver -- also, i bought this table/bed desk and some natural recovery supplements.
Not sure what your snacks look like, but also helps to have a lot of snacks handy (but a lot of fruits and veggies, too!)

I'm not satisfied with the security this cart has for helping with any vibration while moving it though, so I have an idea to do some engineering and add an 'X' like bracket to the side or adding an adjustable piece that slides up and down to secure it from the top of the computer as well.
I don't imagine that it would actually be moved that often or that far. Only problem I'm running into is that usually when people have a cart on wheels like this, it's because they will be standing, so I'm going to have a challenge finding one that will allow me to use it sitting (and sometimes sitting at a couch).
Maybe this isn't the more specifics you had in mind though.

All of that said, I think something like this might work better for you - no worry about weight, metro racks can hold plenty, and it's considerably cheaper. Try searching for printer car, microwave cart, etc.
