Alright so I've always been in love with shitty box mac n cheese, the cheaper the better. But now I can't eat gluten and the gluten free boxes are all stupid expensive and kind of shit besides, so here's my copycat recipe:

gluten free macaroni (preferably Barilla but whatever)

2 tbsp butter

3 tbsp milk

1 egg

1/2 cup grated parmesan

3-4 tbsp cheese powder

1/2 tsp modified tapioca starch (optional)

hot sauce to taste

Salt the shit out of your pasta water. Mix together the milk, egg, parm, cheese powder, tapioca starch and hot sauce. Cook and drain the pasta, then return it to the pot and mix in all the other stuff. Cook over medium low heat until the sauce gets as thick and creamy as you like, stirring and scraping the bottom with a spatula the whole time so the egg doesn't scramble.

I've never actually measured any of these ingredients so take them with a grain of salt.

Just buy the cheese powder from Amazon. 4-5 Tablespoons of this, two tablespoons of butter/margarine, and 1/4 cup of milk, toss with 1/2 pound of pasta (I like Barilla Pipettes, but any old elbow or shell will do):

https://www.amazon.com/Hoosier-Hill-Farm-Cheddar-Cheese/dp/B00B0GGABG

It's also great on popcorn.

Buy this and double the amount of cheese powder you put in to bring it back to its former glory.

Velveeta is the same cheese used in the squeeze pack Velveeta box. For the Kraft powder based packs, you can buy powdered cheddar cheese in bulk off Amazon and just mix it with milk. A huge container of that, some milk, and a big box of elbow macaroni are dirt cheap in comparison to buying boxed Mac n' Cheese. They are also a bit more of a "homemade" feel than just buying things already made and packaged up as a recipe box.

I do not know your Chicago brands, but I do know my local Mennonites: powdered cheddar cheese. Obviously they do not source theirs, which I buy, through Amazon, but the stuff is great. There are times I do not want the smoothness of sodium citrate and instead up the cheesiness of a sauce with the powder, but mainly I make great popcorn and Tex-Mex-Chex mix. It also can be added to a bread dough without creating pockets of moisture that make hollows.

u/InfantBabyJesus · 8 pointsr/pics

If you have Amazon Prime you can get it for $9.99.

There are a few others as well.

u/Fyzzle · 8 pointsr/fatpeoplestories

Take this. Pop some popcorn, dust liberally.

u/itssheramie · 8 pointsr/EatCheapAndHealthy

While /u/stakesandwich 's method is really good, if you're counting calories, definitely consider investing in an air popper. They're like $30 or less on Amazon. 2-6tbs of coconut oil is 240-720 extra calories of fat!

I would air pop the corn and maybe get something like this cheese powder @70cal/serving. After you pop the kernels, add some Frank's hot sauce, then toss with the cheese. Voila!

Alternatively, you could just make a big bowl of plain salted air popped corn, then add a measured amount of the Cheetos in, so as you eat it you get the taste. Hell, maybe you could even crush them in and use in place of the cheese powder?

Also consider using cayenne powder with either of these.

I bought a large tub of instant macaroni, they sell it at the local grocery store in a large can as emergency supplies. It is made by beprepared.com (http://beprepared.com/elbow-macaroni-large-can.html) It can be easily combined with cheese sauce from Annie's or you can just buy the cheese powder from amazon https://www.amazon.com/Hoosier-Hill-Farm-Cheddar-Cheese/dp/B00B0GGABG/ref=sr_1_1_a_it?ie=UTF8&qid=1467662326&sr=8-1&keywords=white+cheddar+powder

Don't forget some extra milk power, I use Nestle Nido, its better than the non-fat stuff.

u/genericlabstudent · 4 pointsr/1200isplenty

The price per serving of rotini was $2.00 (not including shipping costs), and the cheez would be $0.66. I used Fairlife milk, but regular skim milk would be $0.03, and the spread would be $0.08.

So the total is $2.79/serving, with the majority of the price coming from the the pasta. To put that into perspective, the price of a 5 pack of Kraft mac and cheese is like $4.75.

The pasta is $8/bag, cheez is $12/lb, milk is $3.50/gallon, and the spread is $2.50/15oz tub. It would take $26 to acquire the ingredients to make this recipe.

Powdered cheddar cheese. This is basically the powder that comes with boxed Macaroni & Cheese.

u/Dark_Knight7096 · 3 pointsr/Ultralight

I make my own dehydrated boil in bag meals. I use THIS SITE as a template and just modify things as needed. I use a lot of powdered heavy cream, powdered eggs, powdered coconut milk, powdered cheese (all purchasable off amazon), instead of rice I dehdyrate cauliflower rice in my dehydrator.

It requires a bit of experimentation on your part since they don't translate 100% but I've made some good meals, bag tacos, butter chicken, fajitas, pizza casserole, buffalo chicken casserole, breakfast scrambles, cheeseburger casserole, etc. I've been playing around with the idea of trying to make a few keto cobblers.

Portion them out into quart freezer bags with smaller bags for spices/seasonings, when time comes to eat boil a bit of water, dump it in the bag and seal it up, let it sit for 10 minutes or so wrapped in a handkerchief or something then enjoy.

If you are dehydrating yourself you want to use LOW FAT meats. I know that's counter-intuitive for keto but high fat content foods won't dehydrate right, so use lean cuts, then add fat later (heavy cream powder, etc)

here's the DEHYDRATOR I use

Here is the HEAVY CREAM POWDER

COCONUT MILK POWDER

CHEESE POWDER

EGG POWDER

I've priced everything out and for a day's worth of meals I'm around 10 bucks or so, vs Mountain House which are 5-8 bucks a meal and the Next Mile meals keto offerings which can be 15 bucks PER meal

EDIT:

You can also bring mayo packets with you and I like bringing Individual Justin's Peanut Butter Packs also, great way to up the fat and to eat "quickly" between meals.

I dehydrate my own jerky as a snack, also you can hit Walmart and get single serve individual foil packs of tuna and spam, they work good as a quick meal without having to boil water.

I love cheese. Actually just food in general. I'd love some yummy powered cheese so I can make some cheesy popcorn. :)

u/AlwaysBaking · 3 pointsr/Charcuterie

I am not familiar with the KD powder, but dehydrated and powdered cheese (usually cheddar or american) are commercially available with minimal salt and add ins. I am not certain, but I would expect this powder to retain more of its flavor. The powder is also great on popcorn.

Shouldn't be too difficult.

u/pocahontas07167 · 3 pointsr/EatCheapAndHealthy

I cook up various forms of this meal:

  1. boil water to quickly make instant rice or angelhair pasta.
  2. Add lots of dried veggies: JustVeggies or dried soup packets during the boiling water step so they soften up. You can also buy at WholeFoods & Amazon.
  3. Add a package/can of protein: tuna, chicken, shrimp, chili, summer sausage, or beans.
  4. Add sauce (dried or pre-packaged): tomato, pesto, or alfredo sauce, cheese powder/sauce, curry sauces, or even a stir-fry sauce. You can buy individual servings of these, or separate into mini tupperware (4oz ball herb jars or mini salad dressing containers)

I really enjoy my take on Hamburger Helper:

1 lb ground beef

1 package of Shirataki noodles

1 small onion

2tbsp powdered cheddar (any cheese will do here)

4 oz of heavy cream.

In a 12" cast iron skillet, brown the meat on high. Reduce to medium heat, add onions until they are translucent. Turn to low heat, add cream, cheese, and drained noodles. Simmer and stir often for 5-10 minutes.

PS Everyone needs a good cast iron skillet. Get one ASAP and never wash it with soap :)

> I like to eat protein too.

This was something I realized recently: you can add unflavored whey to almost anything, as an alternative to protein shakes. Cereal, ramen, mac and cheese, misc sauces for rice or pasta, etc. Any basic carb can have unflavored protein powder added to balance out the macros without really affecting the flavor. I even made my own high-protein cheese dipping sauce from milk, cheese powder (the powder in mac & cheese, from amazon) and whey powder.

u/notgayinathreeway · 2 pointsr/videos

The powder is actually flour and cheese and milk dehydrated.

>On an industrial level, cheese powder is made by spray drying. That means it is melted down into a liquid, combined with additives, and then sprayed through a nozzle to convert it into droplets. The droplets are then blasted with hot air and vaporized, resulting in a powder.

Whatever you do you can get more cheddar and sour cream pretty easily. Best use for powdered cheese is making a bechemel based mac and cheese more cheesy, but really anything you're doing cheese can be made more cheesy. Also sprinkle on snacks. I'll lightly oil some rice cakes and shake it with cheese powder in a bag, like disks of pirates booty.

u/ithkrul · 2 pointsr/keto

You can use powdered cheddar and sprinkle it or dip pork rinds in it. If you think about how chips are flavored, its pretty much the same idea, just the base material is a pork rind. I've done paprika and cayenne coated pork rinds, etc. Its pretty quick as well.

u/MrMallow · 2 pointsr/GifRecipes

Why not just buy it off of American Amazon? I buy books off of the UK one all the time, so it shouldn't be an issue. I have bought this cheese a few times, its quite good.

Ramen n cheese.

Cook ramen in water. Throw out the packet. Drain the ramen. Add butter, milk, and cheese powder (you can buy it by the jar, or in bulk FYI).

u/papipupepole · 1 pointr/japanlife

So I bought some cheese and sour cream & onion powders when in the States, because so many people raved about having them on popcorn. But, when I try putting them on, they seem to both be just a sticky-finger mess, and also not really add that much flavour to the popcorn. Am I doing something wrong?

u/sarceli · 1 pointr/glutenfree
u/Rarvyn · 1 pointr/Cooking

One thing you can try that I've had luck with is to actually replace the flour with cheese powder. Like, the same sort of dehydrated cheddar that comes with boxed mac and cheese. (ex: https://www.amazon.com/Cheddar-Cheese-Hoosier-Hill-Farm/dp/B008GG9ZS8/ )

Doesn't taste as authentic as a real bechamel, but it sure is tasty for home use.

u/Dr_Dust · 1 pointr/shittyfoodporn

I came across this at the suggestion of another redditor awhile back. It's literally the closest thing to Kraft Mac and cheese powder you can get. You can mix it into anything to cheese it up, or you can make the cheese sauce itself with a couple tablespoons of butter or margarine and a quarter cup of milk. It seriously jazzes up dishes that need cheese. A tub lasts forever as well, like seriously I'd be surprised if you went through a one pound jug in six months. Props to whoever suggested it to me.

I make what we call cheesy noodles (velveeta, butter, cheese powder, milk) with it. It's what comes in the Kraft box. Only complaint is that it clumps and I have to use a mortar and pestle to break it up. Plus side is there does not seem to be a anti-caking agents added.

u/Blind_at_Sea · 1 pointr/TopSecretRecipes

I used to keep a couple Cheetos in a pepper grinder. Much easier than trying to replicate but I’m sure it’s possible. You can buy just about any cheese in powder form and make your own blend.

Hells yes. I had one final canister of this stuff hoarded in the freezer from before they discontinued it, and went through quite a bit of it while pregnant. My grandmother always had a can of "Grated American Cheese Food" around, which is long gone, and I can't even find a pic of it on the Internets. Luckily this stuff is a fine replacement -- allegedly, it's actually Kraft powdered cheese.

This is a problem I've solved.

http://www.amazon.com/Cheddar-Cheese-Powder-1-lb/dp/B00016LZT8/ref=cm_rdp_product

I don't use the cheese sauce mix like UESC_Durandal posted, I use straight cheese powder and I've gone through about 5 lbs of it already. I just use water, a thickener like cornstarch or flour, the powder, some salt and butter. To get good flavor, you want to use a good portion of cheese. To get a sauce consistency you need enough flour and water. You can punch it up with sour cream.

Working with the powder takes getting used to. You need a whisk or something similar to break up all the clumps, and as the stuff ages the clumps become harder to break.
