Now you have the minimal gear necessary to work out exactly what poses you want, and to practice getting the little details right without running up someone else's clock.
All cameras are just devices that capture light hitting a plane. The only real difference between decent cell phone cameras and pro DSLRs is the DSLRs give you control over depth of field and exposure time, and support a huge variety of filters. Filters can be applied digitally after the shoot. Even depth of field can be faked post-production, though I wouldn't recommend that.
If these self-made shots don't come out exactly how you'd like them / good enough for commercial use, after some hours of experimenting you'll at least have many close approximations to refer to as a reference for the pros.
Having a designated shutter button is way different. Plus the added thickness makes it easier to hold on to. Like I’ve said in other posts. I use my phone as a camera a lot. It works well. You can use it as a selfie stick as well as a tripod and has a small grove for the bluetooth remote as well.

I actually JUST got this guy the other day.
I’m fairly certain there are things you can use to effectively clip your phone to your bag, but I liked this tripod particularly because it has a Bluetooth remote.
I used it the first time the other day at the range. I set up the tripod, had the remote in my pocket, and recorded my swings easily without constantly going back and forth.
I picked up a cheap tripod at the flea market for 5 bucks. Then I got at selfstick /cellphone adapter for said tripod like this.

You can put on the timer or if you have a smart watch you can trigger it that way.
All you need now is a photo spot and a certain time of day. Now you can create the illusion that you are normal person and not a dangerous socialpath.

In practice session I video myself. Bought one of these with a cell phone adapter ($3-$10). There are cheaper ones but this one is solid as a rock and I don't worry about my cell phone falling over.

The mounts that hold the camera to the phone have a 1/4-20 hole below. I haven't seen any with gopro flanges. You'll have to use an adapter.
Would this one work? You may already have the parts to build it yourself. You could also build one around a dual gopro mount or a plate like the one included inthis kit.

For reasons that I am not clear on, my wife wants to record some stuff with a cell phone. Actual camera optics is off the table, but what would make things easier is some sort of cell-phone compatible mount for a tripod.
I've got some decent tripod legs and a ball head that's compatible with arca swiss plates.
My question is basically - does there exist some sort of plate / clamp that I can use to mount a cell phone? I'm envisioning something that screws into the top of a cheap arca swiss plate that can hold a cell phone. Something like this.
$6 part, I think it works... should fit on the existing 1/4" screw holes on plates I already have, no?
If it's day light out, I've had good luck with my cellphone camera (iphone 7) and a beefy selfie stick that has a bluetooth remote. The images are plenty sharp (again, if bright enough) and I can get good reach for what I need to do. In your case, depending on the size of the excavations, I'd consider making some kind of rig from PCV pipe or something you could slide the camera along horizontally (maybe pulled by string or something) to get really consistent shots. I wonder if shadows will be an issue for you, but maybe you could use a ring light to help keep it well lit?
If you're set on a non-cellphone camera, look at the Lumix ones, too. They consistently rate very high and some have a really big (for the size of the camera) 1" sensor

Recently I bought (09/30/2019) this remote on Amazon and it works with the Insta360 One X (firmware 1.18.32) photo mode only. It won't work with video mode for some reason. When in video mode, I press the remote shutter and the Insta360 One X switch to photo mode (about 1 to 5 seconds delay) to take a 360 photo instead of a video. Here is the review I posted for this remote shutter on Amazon.
"I bought this for my iPad and the Google Pixel XL phone. For some reason I decided to test it with the Insta360 One X since the Insta360 One X remote control is out-of-stock anywhere I looked (as of 10/04/2019). After I connected the remote shutter with the iPad's Insta360 app, I am able to take 360° photos. I have the latest firmware upgrade from Insta360. The one caveat is that it would not take 360° video even I manually switch the Insta360 camera to video mode. Even it doesn't take videos, I think I might use this at some point until I can get my hands on the actual Insta360 One X remote control."

The other bit... Not so sure. It looks like a flash bracket.
Can't find that exact model, but you could make something similar with this one combined with some Cold Shoe Ball Mounts. Bit bigger than you need but struggling to find a triple mount that's horizontal like that!

We hiked this trail near Carthage, TN. All Trails is how we found this one - it was rated a 'Hard' trail, the only one in the area. The trail is called Bearwaller Gap Trail. This park is crowded with campers but we did not see a single person on the trail. There were parts of the trail that had downed trees from storms, that had been there for awhile. We saw a lot of cool wildlife - Turtles, birds, squirrels, chipmunks, even mealworms and millipedes. Fortunately no snakes! The description from All Trails is as follows: "Bearwaller Gap Hiking Trail is a 10.8 mile lightly trafficked out and back trail located near Carthage, Tennessee that features a lake and is rated as difficult. It comes with a Bluetooth remote so you can start/stop recording without leaving your stance. I just recently got it but it's great for being able to record from the side + a little above, and behind, while keeping the phone completely still.

Oh good, I'm so happy to hear this worked for someone, because that is what we're doing. I dug some junk out of my parent's basement and bought a couple things at the party store. I did, however, get this thing called a "selfie stick" so people can take those Oscar-style selfies! I'm super excited about that one!

21' might be too far for this. If your iPhone has a headphone jack you might be able to use a wired shutter release and a long headphone extender. I don't know if camera can be triggered with the lightning headphone adapter but that might be an option too.
I would get something that doubles as a tripod so you could set it down when you stop somewhere. something like this
It's never going to be very discrete because you will be talking to your phone with something extended from you. It will look as discrete as holding your arm out but you'll get more in the shot.
Another option or addon would be to get a clip on wide angle lens that will get a wider view so you can hold your phone closer. ones like this I don't know how well they work on front selfie cams but I have a similar one my friend bought me that helps get a wider shot. Not sure how much it will distort the image if your face is close, I've only used it for landscape shots honestly.
Side note: I always laugh when I think "discrete selfie stick" cause I think of this.

Something like this works well, and doesn't take the amount of space that a full tripod would. Just put it on something and you're good. One recommendation would be to attach something to the base to make it a little wider and more stable, in case someone knocks it.
This will and can happen with all cameras in general. For a picture to be clear, a lot of light is required. If you have less light, the picture will be less clear. This goes for all cameras. Low light means you need to either hold the camera incredibly still in your hands, or get a tripod. You can get cheap mini tripods that are the size of the phone itself one ebay and amazon for 10 bucks

If you have a Dollar Tree near you, go there and buy a selfie stick or two. They are $1 each. The stick itself you probably won't use but it comes with a phone mount that uses the standard tripod screw. By picking that up for $1, you can now buy any tripod and don't have to pick one that comes with the mount. Hope that helps a little.
