Lots of good advice in here, some not so good too. I'd say the fat + beans comments are right on. Bacon fat or even crisco would go pretty far. If you're sticking with black beans and want more Hispanic flavor profiles, Mexican oregano and cumin are really good places to start. When I make my black beans, I add 2+ Tbsp of Salsa Lizano, some salt, two bay leaves, and cumin to taste. Then when it's done cooking and the beans are how I want them, I mash something like 10-15% of them against the side of the pot and mix them in. For spice I would might saute some rough chopped serrano peppers with the onions.

If you want a different culture meal and like Cajun food, you can make red beans and rice. It's my favorite meal from my childhood and balls easy to make. You saute some andouille first, remove it from the pot, then saute the Cajun trinity (green bell, onion, celery) with a fat of your choice. Then add back in the andouille, your soaked red beans (NOT kidney beans), broth, bay leaves, and fuck that bitch up with cayenne, white pepper, black pepper, and salt to taste. More cayenne the spicier you want it. Sometimes if I'm feeling really fancy I'll throw in a pair of ham hocks. Let it cook like you would any bean dish, and do the mashing thing with them to make a nice thick dish. Remove ham hocks, cut the meat off, and return the meat to the pot. Serve it over white rice cooked with a bay leaf in it. Mmmm, perfection.

Very low calorie foods:

  • artificial sweeteners

  • oat fiber

  • shirataki noodles

  • sugar free gelatin (Jello's are 10 calories each, but there are others out there that are 5 calories)

  • vegetable broth

  • Egg whites

  • many condiments: mustard, horseradish, salsa, hot sauce, etc

  • aquafaba (can be beaten into a large volume of fluff)

  • Crunchmaster multigrain crackers (roughly 8 calories each)

  • freeze dried fruit (this is higher in calories than I'd like, but I'm including it because it can be an easier alternative to fresh or dried fruit)

  • cashew or almond milk (25-40 calories per cup for unsweetened, use it in small amounts and it's almost negligible)

  • Walden Farms salad dressings and dips

  • Coco Lite. I found an asian version of this same kind of formula at my local Korean grocery store. Was way cheaper and tasted better.

  • Artic Zero ice cream and Halo Top ice cream

  • Tofu if you cut it into little 15-30 calorie cubes and bake it. They keep fine in the fridge for a week or so.

They do not have jelly beans here, which is insane. My Ecuadorian wife is also obsessed with this Mexican snack sold in the US called Takis. They sell peanut butter in the stores here along with things like Reeses and they prefer salty snacks so I would focus on those.

As /u/themclavicles said, they're little rice crackers which are salty-sweet, you get two in a packet and they're 29cal per packet. These are the ones I have today, there are also some circular shaped ones which have a sort of icing speckled over the top and are also very nice.

I put chocolate halo top in the microwave on defrost for two minutes so it's soft, and then mix in pb2. Tastes really good. Also if I crave something crunchy but don't have many calories I spread chocolate pb2 (with water mixed in it) on one of these.

I think the easiest thing is to just keep it simple. Veggies and hummus are some of my favorite. These are really delicious if you like a good crunch. I also recommend this but only if you buy them in the store. The amazon price is totally ridiculous.

For you and anyone helping you out:

  • Dried fish and nuts: pretty self explanatory?

  • Dried squid sticks. It says cuttlefish but they taste pretty much the same (to me). There are a lot of brands though, in case he has a preference...

  • Authentic instant noodles: Not sure what would make them authentic, but I'm guessing a pack/bowl you can get at 7-11 would work?

  • Koala Bear Strawberry things: As mentioned, they're available in the US and are called Koala March. Should be the same as the ones in Taiwan, I remember eating them growing up.

  • Pearl milk tea: Not sure how you'd send milk tea across the ocean. But you can probably buy the pearls aka boba aka tapioca and make the tea yourself?

  • Rice crackers: I like these but if he said oval then it may be more like this. Should be this brand though, you can see the boy on the package.

    Like other people have mentioned, you can buy most/all of these in the US, but I know that Tennessee doesn't exactly have a big Asian population so it may be harder there. And snack exchanges are fun! So don't let me get in the way of that. Just in case you ever needed to know for the future.

I should add a little background:

The steaks are vacuum sealed with special bags that enables the dry-aging process with use of a frost-free modern refrigerator. The bags are basically a “membrane” to let moisture out, but moisture cannot creep in.

Pork Clouds are my favorite so far. They are not perfect, but the chicken bone to cloud ratio is tolerable for me. I personally prefer these to Utz, especially with plain and flavored cream cheese as a dip.

For dry aging I suggest the biggest whole loin you can buy.
I've found 20-35 days works best for most cuts but every cut is different so do your research. (35 for ribloin works great). Also don't throw away the trimmings. Grind the trimmings up and mix them with hamburger meat. You'll love it trust me

You should get you some dry age bags, age the steaks for 1 month, then sous vide and reverse sear them. Takes $10 a pound steak to $40 a pound or more steak. Easy peasy, buy bag , vacuum seal them in bag, put in fridge between 33-39f and wait. Actually, waiting the 27 days is the hardest part.

My original stated numbers were a little off.

Also, it's hard to compare before to after since I have a DEXA at the BULK and educated guesses at the cut. If I use my home impedance scale (not accurate, but it's consistent) then I want from like 22%=>17% giving better numbers. A Dexa=>Dexa would be best.

I too keto. (keto for life!) I love it. I'm sitting here at my desk with with a pile of Epic bars and my protein powder.

I calculate and get my .8 protein per lean daily. Low carbs. High fat. Mucho veggies.

I've always been REALLY low on muscle. i.e. I worked out like a flipping manic in high school when I was in football. We all had sloppy diets and poor routines. But my buddies turned into hulks and I stayed very similar and barely progressed. I ended high school at 125lbs.
(yes, a better diet and program would have helped me then, but all my buddies ate shit and did the "nothing but bench" routine. Some of them looked like wrestlers and went off to start in college ball.)

I have medically confirmed low T. I am not interested in taking gear.

I hear you though. I'm always looking to improve. Trying to eat cleaner, work out harder.

Funny thing is that relatively speaking I'm top of my class. I'm 40. Most everyone I know is not fit. Last month I went to a pool party for my kid's soccer party. I swam. The moms were 'mirin. The dads were asking how I stayed so incredibly fit. (hint, for starters ease up on that jug of red wine.)

Thanks for your advice and taking the time. I'm excited to see where I am in 6 months.
